Breakfasts That Boosts Energy:Kid’s Breakfast Burrito

Kids always love foods wrapped in a tortilla. It’s easy to make, portable and freezable. I always make a huge batch on my meal planning day and freeze. The kids can grab, heat for 40-60 seconds and go! Perfect for the days when you’re running late!

Kid’s Breakfast Burrito

Ingredients:

 1 Tablespoon butter

8 eggs, beaten

¼ teaspoon salt

1/8 teaspoon pepper

6 10-inch regular flour tortillas (wheat tortillas is also a good option)

 Filling:

 ½ cup grated Monterey Jack or Cheddar cheese

1 tomato, diced

½ cup onion, diced

¼ cup green or red pepper (mixture of both is colorful)

1 cup bacon or sausage, cooked and drained

8 ounces cream cheese, softened

½ cup salsa

 Optional Ingredients:

 Black olives, sliced

Mild green chiles, diced (adds a little kick)

Avocado, thinly sliced

Chives

 Directions:

Over a bowl, crack your eggs. Using a whisk, whisk together the eggs, salt and pepper  until the yolk and egg whites are mixed together. Set aside.

In a medium skillet, cook bacon or sausage. Drain any excess dripping. Let cool and crumble bacon or chop sausage. In another skillet over medium heat, melt butter. Once the butter is melted, pour eggs into skillet. Using a *Silicone spatula, scramble the eggs until they are no longer runny.

Meanwhile, to make the tortillas easier to work with and keep them from tearing, warm them for a few minutes on the rack of a 250 degree F oven or microwave for 30 seconds.

In a small bowl, mix softened cream cheese and salsa. Take a tortilla and lay it on your cutting board. Spread cream cheese and salsa mixture over tortilla. Scoop your filling ingredients onto tortilla and spread evenly. Top with shredded cheese.

Fold over the top and bottom edges of the tortilla so they meet in the middle. Roll the long edge of the tortilla up until it meets the opposite edge. Continue with remaining tortillas.

Serve with additional salsa.

Recipe Note: To freeze, wrap tightly in plastic wrap, than foil. Label and freeze.

Summer Snacks For Kids:Mega Fruit Chillers

Today the kids are super excited about having a summer play date with a few friends from school. Play dates are a great way for children to socialize, and it provides parents with additional opportunities to entertain their children during the summer. I always make sure to serve a healthy snack.  Our kids love to eat fruit during the summer as a refreshing snack.  They are constantly asking me for a fruit smoothie.  I’ve tested a few smoothie recipes and I thought I would share one of their favorites with you. They are perfect, fun summer time fruit snacks for kids.

Mega Fruit-Chillers

Ingredients:

 1 cup frozen strawberries, thawed

1 cup frozen mango, thawed

1 cup frozen blueberries, thawed

1/2 cup vanilla yogurt

1/4 cup apple juice

1 1/2 Tablespoons honey

Directions:

Puree all ingredients until smooth and combined. Serve and enjoy these Mega Fruit Chillers. 

Recipe Note: Sometimes I will add a little bit of Kale to the smoothie. It blends right in.

Kids Can Have Fun Making Fruity Snacks!

Put some sparkle into snacktime with these Fruity Gelatin Snacks!

Kids Can Have Fun Making Fruity Snacks!

Rubbermaid has these wonderful TakeAlongs Twist&Seal Containers that I use in the kid’s lunch boxes during the school year. They are small enough to fit inside of the lunch boxes perfectly. They have a  leak-proof seal which make them great for storing liquids and snacks. Plus, if you need to microwave the contents, the handles stay cool when food is hot. When the kids are not in school, healthy snacks during the summer are just as important for a busy mom to think about. Why spend extra money on those pudding or fruit snacks at the grocery store when you can make your own at home!

It’s real easy to do and the kids can help too! Empyty your favorite gelatin into a bowl, follow package instructions (with some adult supervision for the young ones of course), toss in some of their favorite fruit and pour gelatin mixture in. Refrigerate for 2 hours or until firm. The kids now have an easy snack they can pull right out of the fridge. When their done, wash containers and make more when needed.

Recipe Note: Fill the containers with Fruit Cocktail, Applesauce, Fresh Fruit, Vegetables, Jello or as a special treat Pudding.

Kids Whole Wheat Bread Sticks Are Fun With ABC’s

This week, I’m all about kid-friendly recipes. I used to hear from my kids, “What can I have to eat Mom?” I solved this question by having a variety of fun little snacks to get them through their day in between meals. This easy recipe is one of them.  I make these bread sticks from my pizza dough  recipe and the kids love them! Although, I must warn you, they eat them rather quick. My suggestion, would be to make a couple batches and freeze.

Kids Whole Wheat Bread Sticks

Ingredients:

2 Tablespoons Butter

1 batch homemade whole wheat pizza dough

1 garlic clove, pressed

All-purpose flour

Directions:

Preheat oven to 425 degrees.In a prep bowl, microwave butter for approximately 15 seconds or until melted. Add pressed garlic. Stir and set aside.

Lightly sprinkle some flour on the cutting board. Cut pizza dough into10-12 equal pieces.

Using hands, roll dough pices into 10-inch sticks. The kids can shape the breadsticks into letters or simply leave them as sticks.

Place breadsticks onto a cookie sheet and spread the butter mixture lighly over them.

Adult Help: Place in oven and bake 10-12 minutes or until golden brown. Remove from oven and let cool completely on wire rack.

Serve with dips such as pasta sauce, mustard, ketchup, or one of your kids favorite dressings.

Triple Layer Fudge Brownies

Triple Layer Fudge Bownies-The name says it all for a chocolate lover’s delight. A nutty chocolate topping and peanut crisp surround a gooey fudge center make these decadent brownies a hit!  Brownies are a special treat in our house and are always a quick and easy dessert to make. When on sale at the grocery store, I always buy a few extra boxes to have on hand for a quick chocolate fix or if company stops by. I made these last night and they were so yummy!

Triple Layer Fudge Brownies

Ingredients:

1/2 cup dry roasted peanuts

1 cup quick oats

1/2 cup brown sugar

1/3 cup flour

1/4 teaspoon baking soda

1/2 cup butter, softened

1 package fudge brownie mix (plus ingredients to make the brownies)

3/4 cup milk chocolate morsels

1/2 cup creamy peanut butter

Additional chopped peanuts

Directions:

Preheat oven to 350 degrees

Chop peanuts.

Combine oats, brown sugar, flour, baking soda and peanuts in a small bowl. Add butter, mix well.

Press oat mixture onto bottom of pan. Bake 8 minutes. Remove from oven.

 

Meanwhile, in a mixing bowl, prepare the brownie mix according to package instructions. Gently spoon the batter over partially baked crust; carefully spread to the edges of pan. Bake according to package instructions for brownies, approximately 28-30 minutes. Cool Completely.

Combine chocolate morsels and peanut butter in a microwaveable bowl. Microwave, uncovered on high for 1 minute. Stir until smooth. spread chocolate mixture evenly over cooled brownies using a spatula.

Sprinkle with additional peanutes, if desired. Cool until chocolate mixture is set. Cut into bars. Store in tightly covered container in refrigerator.

Family Pizza Night:Kids In The Kitchen

Family Pizza Night:

Thinking of planning a Family Fun Night? We always include at least one Family Fun Night where we all create a simply family meal, watch a movie, play games and listen to music. It’s a great way for our family to unwind after a busy week.

Our family had an extra special night as it was our son’s 9th birthday. We had a great family celebration and we created our own pizzas, with homemade dough and Easy Pizza Sauce. I simply made the dough at the beginning of the week as part of my meal plan, froze it and pulled it out to defrost when I needed it.

Pizza is something that’s real easy to make and most kids love pizza and we always like to build our own pizzas.

 

Here’s some of our Friday night creations.

Garlic Supreme Pizza

Pepperoni Pizza

Sausage Pepperoni

Cheese Pizza

Quick Family Meal Ideas:Creamy Turkey and Broccoli

Quick Family Meal Ideas

Usually with Turkey leftovers, I make soup, chili, crepes, enchiladas, and sandwiches. This time I wanted to make a more kid-friendly, quick meal for a busy weeknight. I chose two vegetables my kids enjoy and a pasta noodle. I chose Bow Tie because it’s a fun looking noodle.  I like to use the Wacky Mac noodles too but I wanted one that would match the size of the dish I was making. It’s a great dish and your older kids can whip this up in no time.

Creamy Turkey and Broccoli 

 

Creamy Turkey and Broccoli

Ingredients:

12 ounces Bow Tie pasta

3 Tablespoons olive oil

1 pound, turkey, cut into strips

3 cups broccoli florets

2 red bell peppers, cut into thin strips

1 cup turkey broth

1 container (5.2 to 6.5 ounces) garlic and herb soft spreadable cheese

Parmesan cheese

Fresh cracked pepper

Directions:

Bow Tie Pasta

Cook and drain the pasta according to package instructions. In a large skillet, heat olive oil over medium high heat.

Leftover Turkey

Add turkey meat. Cook and stir 3-5 minutes or until turkey is heated through.

Broccoli and Red Bell Pepper

Remove turkey and add broccoli, red peppers and turkey broth.

(I love the two of these vegetables together. They are so vibrant in color.)  Cover and cook, stirring occasionally, 5-7 minutes or until broccoli is tender.

Turkey and Broccoli

Return turkey to skilley and cook 1 minute longer. Remove from heat. Add cheese then pasta, combinely gently until cheese is melted and smooth.

Spoon into serving dish or bowl and top with Parmesan cheese and freshly cracked pepper.

Creamy Turkey and Broccoli

This meal can be made in 25 minutes and perfect for a busy mom on weeknights. Leftovers can be used for lunch the next day served cold on a bed of lettuce, add tomato and avacado. Enjoy!
