Harvest Pumpkin and Black Bean Soup
This weekend has been a cook-a-thon for me in the kitchen. Rummaging around the pantry to cook up some last minute recipes and stocking our freezer. I started off with a simple Homemade Split Pea Soup than moved onto making crepes, pinto beans and a chicken and mushroom filling for a croissant recipe I have in mind. Looking in my pantry, I had one can of black beans left and a couple cans of pumpkin puree. I’ve been craving the idea of another pumpkin soup recipe and I found this one rather tasty. It’s amazing what delicious recipes you can create with just a few simple ingredients. It’s also another quick and budget friendly meal for the family. The combination of flavors is fantastic. Very healthy too.
Harvest Pumpkin and Black Bean Soup
Ingredients:
2 Tablespoons butter
1 medium onion, diced
4 garlic cloves, pressed
1 15 ounce can black beans, rinsed and drained
1 30 ounce can pumpkin puree
1 14.5 ounce can diced tomatoes with juice
1 teaspoon sugar
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon pepper
1 teaspoon Spanish paprika
4 cups beef broth
1/2 cup heavy cream
Directions:
In a stockpot, saute onions and garlic in butter until translucent. Add black beans, pumpkin and tomatoes, stirring until combined. Add sugar, cumin, chili powder, pepper, paprika, beef broth and cream. Simmer on low heat for 20 minutes.
Recipe Note: This soup can be pureed in a blender or serve as is, garnished with chives, celery leaves or croutons.

Easy and Quick Egg Salad Sandwiches
A creamy, zesty and flavorful egg salad sandwich your whole family will love!
Easy Egg Salad Sandwiches
Ingredients:
12 eggs, boiled, cooled and peeled (click HERE to learn how to boil the perfect eggs.)
1/3 cup light mayonaise
1/4 cup light ranch dressing
1 Tablespoon mustard
1/2 teaspoon salt to taste
1/4 teaspoon black pepper
1/4 teaspoon dill seasoning
1/4 teaspoon paprika
1/8 teaspoon cumin
Directions:
In a medium size mixing bowl, mash eggs with a *Mix ‘N Masher or *Mix ‘N Chop tool until egg white and egg yolk is combined. Add remainer of ingredients and stir until well combined.
Cover and place in refrigerator for 20 minutes to an hour. Serve egg salad on homemade sandwich bread, in pita pockets, on a bagel or on a tortilla. Serve with lettuce and sliced tomato.
This recipe takes approximately 10 minutes to make and would make a perfect school lunch sandwich. Our kids love it!

I’ve spent the last couple of weeks preparing tips, recipes and helpful to-do-lists to help busy moms like you be prepared to make this another fun school year. What better way to prioritize getting ready for back to school than a simple checklist. If you start early, you can easily tackle the list a few weeks prior to school starting.
I know just how difficult it can be at time to get your kids ready for school, making sure they have breakfast, make school lunches and even getting yourself ready for the day. As we move into the school year, over the next few weeks, I’ll share with you my energy-boosting breakfast recipes, that surely will make your kids feel ready for their day.

We know that most children are in school for at least six hours. They are bound to get hungry after breakfast or lunch. A lot of our children tend to spend more time socializing and playing during their breaks than they do eating. To ensure your kids have a healthy and quick snack, I’ve pulled together some quick snack recipes to help give your children the energy he or she needs to participate in the classroom and concentrate on learning.
How will your child be carrying these delicious snacks? Say goodbye to the traditional paper bag lunch and trade them in for lunch boxes that are eco-friendly. Healthy Snacks On The Run
This morning I woke up feeling energized and refreshed after a relaxing weekend. This week, it’s back to the office and kitchen with a busy schedule.
Having that busy schedule, means I need to make sure I keep up my energy eating healthy snacks in between meals.
Fresh fruits and vegetables are always a healthy snack. Apples, carrots, celery, mangos, blueberries, kiwis and pomegranates are all great. These can also be made into juices or smoothies, of course.
Aside from fresh fruits, I also like to choose organic dried fruits and nuts. These can be purchased individually or in trail mixes. As with other foods, there is a wide variety of quality when it comes to things like dried fruits and trail mixes. When I do my grocery shopping, I look for dried fruits and nuts that are on sale so I can make my own trail mix.
One traditional snack food I enjoy that is not usually considered healthy is popcorn. Popcorn can always be a good snack food, if it’s popped naturally and is not topped offr with an artificial butter substitute. Start with organic popcorn, pop it either using an air popper or a traditional popper or pan, using a healthy oil such as canola or sunflower. Top moderately with sea salt and, if you need the butter flavor, a small amount of organic butter or, better still, clarified butter.

Crispy Mexicali Salad
Crispy Mexicali Salad
Fresh vegetables and black beans are united in this salad with a zesty Cilantro-Lime Vinaigrette. It’s light, colorful, crunchy and full of zesty flavor. Very easy to make and tastes delicious! This salad is the perfect compliment to fajitas. Part of our Keep it Cool summer recipe ideas.
Ingredients:
1 head Red Leaf lettuce
1 tomato diced
2 green onions, sliced
1 red bell pepper diced
1 cup black beans
1 cup fresh corn (I used leftovers from our corn on the cob)
1 cup cucumber, diced
1 avocado, diced
Tortilla chips, shredded for topping
Cilantro Lime Vinaigrette (recipe below)
Directions:
In a large salad bowl, add above ingredients in order listed. Serve with Cilantro Lime Vinaigrette.
Recipe Note: For a heartier main dish salad, 2 cups diced cooked chicken or shredded beef can be added, if desired. This salad can be made up to 24 hours in advance. Cover with plastic wrap and store in the refrigerator.
Cilantro Lime Vinaigrette
Ingredients:
1/2 cup chopped cilantro
1/4 cup vegetable oil
2 Tablespoons fresh lime juice
1 Tablespoon water
1 Tablespoon apple cider vinegar
2 cloves garlic, pressed
1/2 teaspoon organo
1/2 teaspoon Southwestern Seasoning Mix (available at www.NoelsKitchen.com)
Salt and pepper to taste
Directions:
In a small bowl, whisk together ingredients. Wrap with plastic wrap and place in refrigerator for one hour to incorporate the flavors.
20-Minute Meal:Thai Chicken with Sesame Peanut Sauce

I am going to show you how to make a quick and delicious weeknight meal your whole family will love. There are times where the actually process of making dinner is not something you look forward to. That’s why creating a meal plan is so important. It’s the perfect back-up plan for those days when you have just about had enough and your family wants dinner like yesterday.
Thai Chicken with Seasame Peanut Sauce
Ingredients:
4-6 chicken breasts, cooked and cubed (This step can be done on your meal prepping day, chicken frozen and thawed in the refrigerator)
Seasame Peanut Butter Sauce:
Exotic blends of lime, lemongrass and garlic bring out the true traditional flavors of Thai.
1/4 cup vegetable oil
1/8 teaspoon seasame oil
4 Tablespoons peanut butter (crunchy or creamy)
4 teaspoons soy sauce
4 teaspoons white venegar
1 1/2 teaspoons sugar
1/8 teaspoon cayenne pepper
1 teaspoon Thai Red Curry Rub (available at www.noelskitchen.com)
1 Tablespoon water
Directions:
In a microwavable bowl, heat chicken, set aside. In a large mixing bowl, whisk together oils, peanut butter, soy sauce, vinegar, sugar, pepper, thai seasoning and water. Add chicken pieces and toss to coat with sauce. Serve on rice or noodles.
Recipe Note: This would be a great meal served on a bed of lettuce greens with green onion and julienne carrots. Sweet Chili Sauce is an optional topping we like to use.

Easy Recipes And Make-Ahead Meals For Busy Moms
The Seasoned Ground Beef make-ahead mixture in this recipe is so versatile for a busy mom and a fun creative alternative to your Twice Baked Potatoes recipe.
Zesty Taco Topped Potatoes
Ingredients:
4-6 baked potatoes (bake in oven at 425 degrees for 1 hour or microwave on high for 12 minutes)
1 1/2 cups prepared Make-Ahead Seasoned Ground Beef
1/4 cup water
2 teaspoons taco seasoning(reserve 1 teaspoon)
1/2 teaspoon cumin
3/4 cup shredded taco cheese blend
1/2 cup ranch dressing
Directions:
Wash and scrub potatoes. Prick several times with a fork. If you have the time, you can place the potatoes in the oven and cook or on a busy night, place potatoes in the microwave and microwave on high 12 minutes.
Add 1 teaspoon of the taco seasoning to ranch dressing. Mix and set aside.
Meanwhile, place seasoned beef mixture in a skillet on low heat, add water, taco seasoning and cumin. (If making this recipe immediately after making the seasoned ground beef mixture, you can omit the water and add ingredients to sauce.) Cover and simmer 5 minutes or until mixture thickens.
When potatoes are fully cooked, slice potatoes lengthwise and fluff with fork. Top with ground beef mixture, cheese and ranch dressing. Other topping such as olives, peppers or sour cream can also be used.

Make-Ahead Meals For Busy Moms
Discover an easy way for make-ahead meal planning and getting dinner on the table in 30 minutes or less. Later in the week on my meal planning day, I’ll share with you step by step instructions on how you’ll be able to to create two different meals with this simple main ingredient recipe.
Seasoned Ground Beef
Ingredients:
*Recipe Note: For a family of six or more, double your ingredients
2 pounds lean ground beef
1/2 cup onion, chopped
1 garlic clove, pressed
1 cup finely chopped celery
1/2 teaspoon salt
1/8 teaspoon fresh cracked pepper
2 cans (8 ounces each) tomato sauce
2 Tablespoons Worchestershire sauce
Directions:
Place ground beef in a large family skillet. Cover and cook over medium heat 12-15 minutes or until no longer pink, mixing and chopping beef turning it into crumbles. Drain. Set aside.
Add onions, garlic and celery to skillet. Saute until onions are golden. Add ground beef, stir until mixture is combined. Add salt, pepper, Worcestershire sauce and tomato sauce. Reduce heat to low and simmer 15-20 or until thickens. Remove from heat and cool.
Spoon about 2 cups into a freezable container, leaving 1/2-inch space at the top. Seal and label containers. Freeze. Use within 3 months.
For use during your weeknight meal, simply put 2 cups into a refrigerator container and refrigerate for up to 2 days.
This recipe is a lifesaver on those extra-busy days.
