Everyday Meal Planning For Busy Moms

What’s most important in cooking, is to remember to have FUN and ENJOY your time in the kitchen and learn to do things your way. Experiment and make changes that work for you.
Knowing that I still had to do a last minute proof on my regular blog post, I didn’t have to worry about “What’s for Dinner” coming at me. I knew Monday’s dinner for me was going to be quick and easy because I already had a meal plan in place. I started creating my menu plan for the week on Sunday and knew exactly what I needed for dinner and what preparation I needed to do ahead of time. Monday’s dinner theme is Mexican, so the kids and I created Corned Beef Tacos and served them with Crock Pot Pinto Beans. The beans were prepped the night before by pre-soaking them. In the morning before heading to the office, I drained them, and put them in the crock pot with some seasoning, more water and cooked them all day. They were perfectly cooked by the time I got home. I also prepped the ingredients needed for the Corn Beef tacos on Sunday. Chopped the tomatoes, onion, and chiles that I needed, put them in an air-tight container and popped them in the fridge. They were ready to use when I needed them.
Corned Beef Tacos
Ingredients:
4 cups shredded corned beef
1 large beef tomato
1 small red onion
1/4 cup miled green chiles, diced
2 Tablespoons fresh lemon juice
Fresh cracked pepper
lettuce, shredded or chopped
1 cup Cheddar Jack cheese
Corn tortillas
Directions:
In a small bowl, mix tomato, onion, chiles, lemon juice and pepper. Place desired amount of corned beef on tortillas. Add lettuce. Spoon tomato mixture on top, sprinkle with cheese. Serve with beans and Enjoy!
For a zestier taco, drizzle some Ranch dressing over tacos.
