Hi there! Hope you all had a great weekend!
There are many of us moms who work outside the home; which means that we aren’t always home during the day to do much prep work when it comes to our dinners. Luckily, we do still have weekends — and freezers — that allow us to prep a weeks worth of food ahead of time so that we too can give our families and ourselves good, home-cooked dinners all week long.
This week, we’re working on those simple suppers that don’t need a whole lot of prep work and will satisfy your family any night of the week.

My weekly meal plan and shopping list is completed and posted on our fridge:
Breakfast options:
Stuffed French Toast with fresh berry topping, Fruit n’ juice breakfast shake, Zucchini Carrot Bread, Banana Bread (recipes posting this week), Homemade Greek Yogurt, cereal, toast, eggs, and/or fresh fruit
Lunch options:
Sandwiches, Leftover Chicken Pasta Salad, Slow-Cooked pulled Pork Sliders, protein shakes, salad, fresh cut veggies and/or fruit

Need ideas for your weekly meal plan? It’s time for another weekly menu. I enjoy menu planning because of the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. Sunday: Grilled Chicken Pasta Salad Supreme, Watermelon slices
Monday: Breakfast Skillet
Tuesday: Onion Burgers with Creamy Salsa and Spanish Mexican Rice
Wednesday: Chicken Gyros with Yogurt Dill Sauce
Thursday: Crock Pot Lasagna Florentine
Friday: Our first Friday Family Favorites Night of the month! ~We’re starting off with Yahtzee Game Night! Our dinner menu is Meatball Hero Sandwiches
Saturday: Easy Sante Fe Style Stuffed Peppers
