This week, I’ll be shopping my freezer to find a bunch of make-ahead meals that I can thaw in the refigerator while I’m at work and re-heat within a matter of minutes to serve my family for dinner. Here’s the menu plan for this week:
Breakfast:
Oat Bran Muffins, fresh fruit smoothie
Buttermilk Pancakes, turkey bacon, fried eggs, homemade applesauce
Cinnamon rolls
Homemade Bagels, cream cheese, milk
Cereal, Milk, String Cheese
Homemade Sour Cream Biscuits, jelly, orange juice
Spinach Smoothies
Lunch:
Homemade Pizza Rolls, peaches, cookie
Burritos, tortilla chips, oranges, Jello
Grilled Cheese Sandwiches, carrot sticks, fresh fruit
Mini Cheeseburgers, lettuce & pickle, apple, pretzels
Hot dogs, festive corn, fresh fruit, mini cupcakes
Leftovers
Dinner:
Chicken Pasties Chicken and Vegetable Calzones, served with green salad
Grilled Tilapia with Mango Black Bean Salsa
BBQ Chicken Sandwiches, served with Ranch Style Beans (Recipe to post later)
Mongolian-Style Beef
Nachos Grande
Crockpot Chicken Enchiladas, carrot sticks
Sweet Italian Sausage served with hasbrown potatoes, eggs, applesauce bread
Snacks and Desserts: leftover frozen cookies from the party; popcorn, cheese and crackers
