Zesty Oven Roasted Chickpeas is simply a mix up of some chickpeas (I buy the dried ones and pre-cook but you can use canned), a bit of olive oil and some spices and spread them on a baking sheet.
This is one of the best snacks I’ve EVER eaten and the simplest to make and because you can make it in literally 20 minutes. Bake, stir and bake some more and that is it. These are so easy to make, that it is almost surprising how good they are.
I don’t even remember where I actually read about roasting them for the first time. But since then, I’ve changed the spices I use a few times trying out different ones. Using coconut oil and cinnamon if I’m craving something sweet or a little bit of olive oil with cumin, paprika, and garlic powder but I keep going back to this one. Olive oil with homemade taco seasoning.
Zesty Oven Roasted Chickpeas
- 1 can (1 2/3 cups) chickpeas (aka garbanzo beans)
- 1 Tbsp olive oil
- 1-2 tsp homemade taco seasoning
- Preheat oven to 400.
- Mix all ingredients in a bowl and stir until well coated.
- Spread chickpeas on a baking pan and bake at 400 for about 20 minutes. Stir and continue baking for another 10-15 minutes, or until chickpeas are crispy.
