Hope you all had a good weekend with your family! I’m SO glad to have my weekly meal plan finished for the week. Now that school is officially back to full swing, it’s really time to focus on creating those weekly meal plans. Mondays are typically my days off but I didn’t get a chance to post our plan yesterday. We’re on our last week of our pantry challenge, so things are getting a little more interesting. However, we still have plenty of good food left, so we’re not too challenged yet.
During the week we like to make things simpler to where we don’t have to spend so much time in the kitchen and more time as a family. And with the first full week of school passing, it’s time to get back into a weekly school night routine. It just makes life so much easier. Don’t you agree? Here’s what’s on our menu for the week.
This month, we’re keeping organized and putting more effort into frugal living and my hope is to help you all on this journey with me to continually save time in the kitchen, have a weekly meal plan and continue to create those family mealtime memories.

My weekly meal plan and shopping list is completed and posted on our fridge:
Sandwiches, Tortilla Rollups (aka “Prairie Sushi”), protein shakes, pizza roll ups, salad, fresh cut veggies and/or fruit

It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. Sunday: BBQ Chicken Salad with Corn Salsa
Monday: Breakfast for Dinner!~ German Pancakes with Warm Cinnamon Apple Slices
Tuesday: Turkey Veggie Pasta
Wednesday: Mini Turkey Meatloaves, sweet potatoes and mixed green salad
Thursday: leftovers, mixed green salad and whole wheat bread
Friday: Jalapeno Chili, corn tortillas
Saturday: Chicken Pot Pie
