Celebrating A New Year Of Living Healthy

Happy New Year My Friends! I don’t know about you, but I am so ready for MORE in 2019. The year is sure to be a fantastic one.

For myself, I have a lot planned for this month and this year. But – going to be taking those small baby steps and planning it all out.

One of my goals is to be more regular with my blogging posts and to get back into doing what I love doing so much. Creating, writing and sharing with others.

I know so many people try and kick off their New Year with a New Year’s Resolutions goal for a “new you” or a “new diet” that you want to try. One of the most important lessons we can learn in life is to love ourselves. So if you choose to splurge on ice cream or cookies, it’s ok. There’s no reason to feel guilty.

What Are Your New Years Resolutions?

My goal in this area is to simply make more healthy food choices, meal plan and stay away from the processed foods. I’ll also watch the portion control and try not to get into those bad habits of eating because I’m bored. 

Family Favorite Healthy Meals

I am excited to simply share healthy family favorites and some new healthy meals with you. There are simply no diet tricks I’ve tried, or diet foods that we eat as a family, or anything like that. There will be so much less guilt. But, if you want something that includes delicious flavors then I’ve got you covered.

This recipe originally came from a healthy meal kit from Raley’s believe it or not. I’ve adapted it to our family’s tasting.  When I was testing this recipe out, I tossed in some extra sugar snap peas for a little more crunch. I really liked the combination, plus the added nutrients from all the veggies.

Vegetable Yellow Curry Recipe

Celebrating veggies aside, the secret is really in the sauce. I am a lover of a little more spicier curry sauce, so I opted for a dab of sweet chili sauce drizzled on the top. Since this is a vegetable dish, the main grain is rice. I used brown rice, but white or jasmine rice would be a great substitute. You could also mix grains if you wanted to.

Ingredients
  1. 1 to 2 russet or yellow potatoes
  2. 1 large red or green bell pepper
  3. 1 1/2 cups sugar snap peas
  4. 1/2 cup diced cauliflower
  5. 1 cup chickpeas
  6. 1 to 1 1/2 cups brown rice
  7. Naan bread
  8. 1/4 cup cilantro roughly chopped
  9. Yellow Curry Sauce -link below
Instructions
  1. Preheat oven to 425 degrees.
  2. Cook rice according to package directions.
  3. Wash potato, bell pepper and cilantro. Pat dry.
  4. Cut potatoes into 3/4 cubes. On baking sheet, toss potatoes with 1 teaspoon olive oil and a dash of salt.
  5. Place in oven and cook for 15 minutes.
  6. Meanwhile, cut off stems and remove seeds from bell pepper; cut into 1-inch squares and place in a large bowl.
  7. Add cauliflower, snap peas and chickpeas to bowl and 1 Tablespoon olive oil to bowl. Season with salt and toss.
  8. Add ingredients to baking sheet with potatoes. Return to oven and cook until potatoes are fork tender. About 10 to 15 minutes.
  9. Add curry sauce to skillet. (I'll explain more in the notes section.)
  10. Add cooked vegetables to skillet.and stir to combine.
  11. Wrap naan bread in a paper towel and microwave for 10 seconds.
  12. Toss rice with vegetable curry mix, garnish with cilantro and serve with naan bread.
Notes
  1. You can make the curry sauce ahead of time or prepare in a skillet since you will be adding the vegetables and rice in later.
  2. Oven times vary with different ovens so you can adjust the cooking time for the potatoes as needed.

This is a pretty straight-forward easy dish to make. You don’t need any fancy equipment to cook vegetables! However, having some good basic kitchen tools can really make your time in the kitchen more enjoyable. Over time, I’ve honed my collection so that they are perfect for my needs. Here are the tools that I like to use in this recipe.

Chef’s Knife – A good kitchen knife is a must in any kitchen to make meal prep easy and quick.

Cutting Board – I love using the bamboo cutting boards; they repel water, resists bacteria, and is fairly light plus they are earth friendly.

Baking Sheet – You can’t go wrong with a good baking sheet. 

Large Saute Pan – Heavy duty but easy enough on the hands when maneuvering foods from the pan to the plate.
