Slow-Cooked Meat Loaf

What could honestly be more comforting to come home to than a moist and tender home-made meat loaf to gather your family around the dinner table?  This meat loaf retains its shape in the slow cooker and slices beautifully. Served with a spring salad mixand cottage cheese topped with peaches, this is truly an afforable comforting meal your family will love!


Slow-Cooked Meat Loaf


1 egg
1/4 cup milk
2 slices day-old bread, cubed
1/4 cup onion, finely chopped
2 Tablespoons green pepper, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup ketchup, plus 1 Tablespoon


  • In a bowl, beat egg and milk. Stir in the bread cubes, onion, green pepper, 1 Tablespoon ketchup, salt and pepper.
  •  Add the beef and mix well. Shape into a round or oval loaf. Place in slow-cooker.
  • Cover and cook on high setting for 1 hour. Reduce heat to low setting; cover and cook 7-8 hours longer or until no pink remains in the meat.

Noel’s Quick Notes: Meat loaf can be prepared the night before and placed in the refrigerator until ready to use. To save even more time,  meat loaf can also be frozen. Pull out the night before and thaw in the refrigerator. I use the same ingredients in this recipe to make meatballs too.

Variations: The meat loaf would also taste good with potatoes and carrots. Arrange carrots around loaf. Peel a strip around the center of each potato; place potatoes over carrots. Because potatoes and carrots cook along with it, the entire dinner is ready at the same time.
