Need ideas for your weekly meal plan? It’s time for another weekly menu. I enjoy menu planning because of the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. My Weekly Meal Plan
Were you a worried there wasn’t going to be a weekly meal plan? The craziness from the weekend has finally settled down around here. Last Friday was the big day…Victoria graduated from high school. Wow, how time goes by so quickly. Needless to say we’re extremely proud of her and she a wonderful addition to the world out there. So many possibilities. The weekend ended with our first visit to Sunset magazine headquarters in Menlo Park for Sunset Celebration Weekend. We found lots of ideas for some backyard projects this summer.
The younger kids are out of school tomorrow so I thought it might be kind of fun to have a “mini” graduation, end of school party for them. Nothing too fancy, just kid-friendly and fun. I know lots of people start searching for ideas on graduation party menus, so I thought I’d share some of my ideas with you.
- Mexican Taco Bar ~ Serve spicy ground beef in a crock pot, and put the cold items (lettuce, tomatoes, cheese, salsa, olives, onions) in bowls floating on ice to keep them cool. Arrange the hard and/or soft taco shells in a Mexican serving bowl or basket. Or serve taco chips.
- Hoagie or Sandwich Bar: everyone assembles their own sandwiches. Have a variety of meats and cheeses to be sliced and served as needed.
- Veggie Tray with a variety of fresh veggies and dip
- Fresh fruit and vanilla wafers with fruit dip
- Chips, Peanuts, Popcorn and Cracker Jacks
- Lemonade, Fruit Juice and Soda
- Cake and Cookies

Breakfasts Just because school is out doesn’t mean breakfast won’t happen. Kids still need to get off to a good start with high-quality, low-fat breakfasts. If you’re in a time crunch and you’re morning is a rush, plan your breakfast the night before. These recipe ideas will be posted throughout the week: Cinnamon Roll Pancakes, French Toast Egg-in-a-Hole, Scrambled Eggs with Ham and Apple, Whole-grain toast or a bagel with strawberry jam and a piece of fresh fruit, maybe some Whole-Wheat Buttermilk biscuits with nonfat yogurt, low-fat cottage cheese, or skim milk with fresh fruit.
Lunches are usually a bit more flexible, but this week we’ll start off with a Deli Style Pasta Salad, Egg Salad Sandwiches, Green Garden Salad.
Snacks Apple-Cheese Snacks, Munchy Crunchy Granola, Raw Veggies Snacks
In addition to our weekly menu, we have a baking day on a weekly basis. Every Sunday afternoon, we will rotate through restocking some nutritious snacks and baked goods, such as granola, protein bars, granola bars, muffins, and/or biscuits for various meals.

Sunday: Pasta with Red Sauce, Steamed Broccoli and Fresh Baked Bread
Monday: Club Wraps, Fresh Fruit, Carrot Sticks
Tuesday: Bean Burritos, Yellow Rice, Black Beans, Chips and Salsa
Wednesday: Sausage-and-Scrambled Egg Pizza, Fresh Fruit
Thursday: Ranch Noodles with Ham
Friday: Sloppy Joe Squares, Iceberg lettuce wedges with cherry tomatoes
Saturday: Upside-Down Pizza Casserole, Garden salad
