Along with my weekly menu, I’m sharing a recipe for Homemade Italian Meatballs. It’s really quite the simple recipe really and making them from scratch is actually pretty fun, especially with the kids.

I started with my original Meatball/Meatloaf recipe, and changed it up just a bit. I used a combination of ground beef and Italian pork sausage, which gave the meatballs that extra Italian flavor.
I used my smaller cookie dough/ice cream scoop to make the meatballs a little smaller than I normally make them, so I could use them in my Italian Meatball Sub Sandwiches.

And off to the frying pan for a little browning…..
Then after some very quick browning, it’s in a glass pan and off to the oven……

Homemade Italian Meatballs
- 1 pound ground beef
- 1 pound Italian pork sausage
- 3/4 cup oats
- 1 cup milk
- 3 Tablespoons onions, finely chopped
- 1 garlic clove, pressed
- 1 Tablespoon dried parsley
- 1 Tablespoon dried sweet basil
- 1/2 teaspoon salt
- Fresh ground pepper
- 1 cup flour
- Vegetable or Canola oil
- Mix all ingredients together until well combined
- Form into balls and place on cookie sheet
- Roll meatballs in flour, and fry in oil about 2-3 minutes turning once
- Place meatballs in 13×9 glass baking dish
- Bake at 350 degrees for about 30-40 minutes
- Serve with spaghetti sauce, barbecue sauce, or make Italian Meatball Sub Sandwiches

It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. One of my goals and challenges this week is to re-stock my freezer by doing a freezer cooking session at the beginning of the week to prepare lots of our meals quickly and save on our grocery budget. Plus, we’ll have more tasty meals to choose from.

Thursday: Chicken Phillies, Green Salad, Oven Fries
Friday: Twice Baked Potato Bar and Appetizers
