Finding My Groove In The Kitchen

The stocking of the freezer continues! I’m finally getting back into the groove of cooking ahead after a crazy past week. Car shopping can be so exhausting and stressful, but we did it and I’m happy it’s over with. We now have a family car with no car payments, insurance is low, it’s great on gas mileage and it has lots of room for the family and groceries.

Finding My Groove In The Kitchen

On with the cooking…. Last night I pre-soaked a big pot of beans  in water and this morning I’m throwing them in the slow cooker. It so easy to and well worth it to make them ahead of time, freeze in 2 cup portions and pull out when needed for burritos, taco salads, chimichangas, beans and rice or even soup. On Sunday, I cooked up some Pizza Sauce in the slow cooker and froze that in 2 cup portions.


 Later in the week, cost-wise permitting, I’ll cook up some ground beef with taco seasoning. This is perfect for tacos, twiced baked potatoes, sloppy joes and hamburgers. It’s so nice to cook it up with such simple spices and create a variety of meals.

Shredded Chicken

 While we were eating dinner on Sunday, before turning off the oven, I slipped in a pan of chicken breast into the oven to bake while we ate. I seasoned it simply with salt, pepper and a little bit of mixed seasoning with garlic and then baked at 375° for about 45 minutes to an hour. The chicken was done by the time we finished eating. It cooled while I cleaned up the kitchen, and then I shredded it, bagged it in 2 cup portions and placed it in the freezer. I can get 6 meals from the chicken I shredded….Tacos, Chicken Salad Sandwiches, and Chicken Pot Pies.

So that’s it for now…I’ll be jotting ideas for menus and freezer cooking throughout the week. My next goal is to marinade chicken while it freezes, so it’s already prepared to cook. Stay tuned… In the meantime…
