Cauliflower rice is not only a healthy alternative to your everyday rice but is also a tasty, grain-free alternative and makes for a great side dish.
There seems to be that I have a love hate relationship with the cauliflower. I use it in stir-fry or alongside other raw vegetables with dip as an appetizer or snack, but it’s a vegetable that I always seem pass up in the grocery store. I didn’t offer it too much on our family’s meal plan until I was discovering new healthy food choices for our family’s menu. Somehow, the cauliflower always seems to pop up…in such ways as making pizza crust or transforming it into cauliflower rice. So with a cauliflower head in my fridge from our produce box I decided to give the cauliflower another chance.
Easy Steps to Make Cauliflower Rice
Cauliflower Rice is a tasty, grain-free alternative to rice and makes for a great side dish to vegetables, meats, stir-fries, etc.
- Trim the cauliflower and cut into roughly equal-sized florets.
- In batches ( don’t overcrowd your food processor), place florets in a food processor in a single layer.
- Pulse 3-5 times until a rice-like consistency forms.
- Heat a small amount of oil in a pan over medium heat (I also added a little diced onion and chopped garlic), then add your cauliflower rice and sauté 3-5 minutes until soft and turning slightly golden brown. Season with salt and pepper to taste. Then eat it up! It’s that easy!

How To Freeze Cauliflower Rice
Because a large head of cauliflower will make a huge batch, I decided to freeze some of it. To do this, I just scooped about a cup or so of the UNCOOKED cauliflower rice into small ziploc bags or ziploc freezer containers, and then placed them in the freezer.
Needless to say it is quite delicious and I will definitely be working this into my Sunday meal prep rotation!
