Hi friends! How’s the morning going? Happy humpday! Today I’m sharing a quick get out the door 21 Day Fix Breakfast Tortilla recipe. It’s almost like a Huevos Rancheros breakfast. I made a batch of black beans in the crock pot at the beginning of the week on my meal prep day and portioned out some to eat during the week and froze the rest in containers for future use.
It’s very easy to make and full of flavor!
21 Day Fix Breakfast Tortilla Recipe
- 1 small corn tortilla
- 2 scrambled eggs
- 1 tsp. coconut oil
- 1/2 cup chopped tomatoes
- 1/2 cup chopped bell pepper
- 1/4 cup chopped onions
- hot sauce (optional)
- 1 cup fruit of your choice
- Saute the bell pepper until tender. Remove from pan.
- Scramble the eggs & spread over the tortilla, add all ingredients and serve the fruit on the side.
Easy peasy and delicious!
