Roasted Chickpeas

This could be the one of the best snacks I’ve EVER eaten and the most simplest to make! You can make it in literally 20 minutes. Roasting Chickpeas is simply a mix up of some chick peas (I buy the dried ones and pre-cook but you can use canned), a bit of olive oil and some spices and spread them on a baking sheet. Bake, stir and bake some more and that is it. These are so easy to make, that it is almost surprising how good they are. 

I don’t even remember where I actually read about roasting them for the first time. But since then, I’ve changed the spices I use a few times trying out different ones. Using coconut oil and cinnamon if I’m craving something sweet or a little bit of olive oil with cumin, paprika and garlic powder but I keep going back to this one. Olive oil with homemade taco seasoning.

Roasted Chickpeas
Bake, stir and bake some more and that is it. These are so easy to make, that it is almost surprising how good they are.

  1. 1 can (1 2/3 cups) chickpeas (aka garbanzo beans)
  2. 1 Tbsp olive oil
  3. 1-2 tsp homemade taco seasoning
Instructions
  1. Preheat oven to 400.
  2. Mix all ingredients in a bowl and stir until well coated.
  3. Spread chickpeas on a baking pan and bake at 400 for about 20 minutes. Stir and continue baking for another 10-15 minutes, or until chickpeas are crispy.
