Fast, delicious, healthful NO-Bake Energy Bite Cookies! Perfect if you’re a chocolate and peanut butter lover!
Recipe: Makes 24 servings, 1 cookie bite each
– 1 cup natural peanut butter (or almond butter)
– 1 cup quick-cooking rolled oats
– 1/2 cup raw honey
– 1 cup Chocolate Shakeology
Preparation:Combine peanut butter, oats, honey and Shakeology in a medium bowl; mix well with a spatula or by hand. Roll mixture into 24 balls, each about 1-inch in size. Flatten each slightly so that it is shaped like a traditional cookie or leave in the shape of a ball. Serve. Keep refrigerated.
Optional: Roll finished cookie bites in crushed nuts, oatmeal, cinnamon, whole- grain graham cracker crumbs or unsweetened coconut flakes.
