Making Baked Eggs is pretty simple and quick. I’m always in search of quick easy snacks and meal ideas! The fact that you can make these ahead of time, pop them in the fridge and grab and go for the rest of the week just makes perfect sense! The other bonus is that if you have kids you can easily give these to them on the way to school or in the car if your’re going on a road trip!! It’s a no brainer way to sneak in proper nutrition!!!
The awesome thing is that you can throw in virtually any veggie or spice you want to get the taste you desire!! They are perfect eggs for eating alone, with salsa, with avocado or on a breakfast sandwich and a versatile meal that can be eaten on the go or at home. for breakfast, a snack, lunch or dinner.
First, spray your muffin tin with a little oil. Next, crack your eggs and drop them into the muffin tins. You can sprinkle salt and pepper over them or add any other spices, herbs, flavorings, or mix-ins as you wish! Place into a pre-heated 350 degree oven for 12-15 minutes. Depending on how you like your eggs. Then let them cool slightly and pry them out with a fork or a spoon.
