Crockpot Salsa Chicken

I get a lot of requests for budget-friendly family crockpot recipes. This Crockpot Salsa Chicken recipe is a staple in our house and makes enough leftovers for lunch the next day or to freeze for another night’s dinner. It’s an easy weeknight recipe and definitely kid-friendly.  It  can easily be used on corn tortillas, healthy nachos, tacos, salads, quesadillas- really anything you want to add chicken to. I love it with a little dollop of  greek yogurt that I season with chili powder and cumin, cilantro and lime juice and maybe a serving of  broccoli  or peppers and onions on the side. It’s pretty much a fool proof recipe and is a great meal to make for any occasion!

Crockpot Salsa Chicken

As you can see, the ingredients are pretty simply. Here’s what you need for this recipe:

  • 1 bag boneless, skinless chicken breasts (there are usually 4 to 6 in bag)
  • 1 jar of your favorite salsa (I either make my own salsa or use Raley’s Salsa Verde (I’m so happy it’s in a larger jar now. We love it! :))
  • A crockpot
  • 2 forks for shredding

That’s it! Easy peasy! 🙂

I pour the entire bag of frozen chicken breasts in the crockpot, then pour the entire jar of salsa over the top. Cover and cook on low for 8 hours or until the chicken shreds easily. After shredding the chicken,  leave it on low for another 20-30mins to to allow the chicken to absorb the salsa. Voila!! It’s pretty amazing and so easy!

Chop up some peppers and onions, and some diced onions and mixed greens, serve with corn tortillas and your meal is complete. (21-Day Fix approved :)) This Crockpot Chicken Salsa Recipe is absolutely GREAT for those chilly weeknights or weekends when you’re out and about and you come home to a wonderful meal already made. 🙂

  1. I made this a week ago and family loved it. I used a spicy, chunky salsa that had beans and corn. It was so good.
