With the Fall months here, I’m really looking forward to home cooked meals that incorporate Fall traditions. I’m in the beginning of week 2 on my 21-Day Fix program and haven’t had a cheat meal in 5 weeks! Can I get a Woot Woot! That means, that I’ve used nothing but fresh ingredients when cooking my meals and no processed foods. I’ve lost a total of 6 pounds over these past few weeks and I’m feeling great!
For breakfast this morning, I thought it was a perfect time to make these Pumpkin Spice Pancakes. I love cooking with the spices that remind me of Fall. This breakfast was very filling and delicious!
Pumpkin Spice Pancakes
- 1/2 cup oats
- 1/2 banana
- 2 eggs
- 1 tsp Pumpkin pie spice
- 1 tsp vanilla
- 1/2 teaspoon coconut oil
- Place the oats in the blender and blend until fine.
- Place all other ingredients (minus a couple slices of banana to use for garnish) and blend until mixed thoroughly.
- Heat pan or griddle with coconut oil. Pour onto pan or griddle. Cook and Enjoy!
Makes 2 pancakes.
