Pumpkin Spice Pancakes

Posted on 16 September 2014 by noelskitchen

With the Fall months here, I’m really looking forward to home cooked meals that incorporate Fall traditions. I’m in the beginning of week 2 on my 21-Day Fix program and haven’t had a cheat meal in 5 weeks! Can I get a Woot Woot! That means, that I’ve used nothing but fresh ingredients when cooking my meals and no processed foods. I’ve lost a total of 6 pounds over these past few weeks and I’m feeling great!

For breakfast this morning, I thought it was a perfect time to make these Pumpkin Spice Pancakes. I love cooking with the spices that remind me of Fall. This breakfast was very filling and delicious!

Pumpkin Spice Pancakes

  • 1/2 cup oats
  • 1/2 banana
  • 2 eggs
  • 1 tsp Pumpkin pie spice
  • 1 tsp vanilla
  • 1/2 teaspoon coconut oil

  1. Place the oats in the blender and blend until fine.
  2. Place all other ingredients (minus a couple slices of banana to use for garnish) and blend until mixed thoroughly.
  3. Heat pan or griddle with coconut oil. Pour onto pan or griddle. Cook and Enjoy!

Makes 2 pancakes.
