Wow, it’s been a long time since I posted here on Noel’s Kitchen Tips. I’ve been so busy getting our family business Grumpy Treasures Thrift and Consignment up and running these past six months and with writing on that site, customers orders, helping our clients and the grand opening of our storefront this past December 7th of 2013, I have neglected and truly missed writing about one of my daily passions…family mealtimes and the quick and easy recipes our family enjoys so much.
I’ve also received numerous emails from those who would like to contribute a guest post to the blog and I just wanted to say that at this time, I’m holding off on guests posts until I’m back in the full swing of things with the site. I will post an update when I’m ready for contributions. I truly appreciate your offers.
With the opening of the store and being open six days a week, I’d really had only one full day to plan our meals, run errands and manage the day-to-day household duties, until recently when we decided to close on Sundays too during the winter time.
With that being said, and with a busy schedule, I have to manage my time much more wisely than before. It’s not like a regular 9 to 5 job where you just leave and take orders from your boss. It’s a 24/7 online business that includes running the day-to-day activities of a storefront. The rewards are great! I could go on and on about being a business owner, but that’s another story. Planning our family meals is still a very important part of what makes coming home to a well planned family meal easy. And let’s just say, my crock pot has definitely become my true friend in the kitchen lately.
Today’s recipes is inspired by my family’s love for Chocolate and Peanut Butter. Hershey’s recently came out with Hershey’s Spreads which come in three different flavors, Chocolate, Chocolate Hazelnut and Chocolate Almond. What a delicious spread!
They might just give Nutella a run not only in cost but flavor too. Even the grocery store’s are trying to compete with their brands too. That’s how I found Raley’s Hazelnut Spread. By far, it’s my favorite, less in cost and creamier. The hubby says it’s more “candy like” but it’s not too sweet. If any of you are cuddled up at home today with your kids, this is a fun cookies to make.
- 1/2 cup shortening (butter flavored)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1/2 tsp. vanilla
- 2 cups flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- Raley's Chocolate Hazelnut Spread
- Cream shortening, sugars, and peanut butter together in a mixing bowl.
- Add egg and vanilla. Mix until light and fluffy.
- Add dry ingredients. Mix completely.
- Form into 1" balls.
- Place on a greased baking pan.
- Bake at 350 degrees for 12-15 minutes or until lightly brown.
- Cool 10 minutes before dipping or spreading the Chocolate Hazelnut Spread onto the cookies.
- I use my medium ice cream scoop to get the perfect size balls. This recipe makes 2-3 dozen cookies depending on how big you make the balls. A small size scoop would make balls perfect for a gift basket of cookies.
- You can also replace the shortening with butter or margarine.
