Sweetened with honey instead of sugar this make ahead granola is sure to be the family’s choice for a healthy breakfast or snack.
My family loves cold cereal and It’s amazing how fast they can go through one box. But cereal can be pricey if you don’t find a good deal or have coupons. And I really don’t feel I should or want to buy 4 or more just to get a few cents off each one. (It amazes me what stores will put on their price tags to get you to buy more than what you want or need.) I remember when you used to get cereal for less than a buck after sales and coupons. But, those days are long gone now.
While those yummy sugary boxes of cereal can be tempting to buy, I know I can make my family a more healthy and nutritious breakfast with a little make ahead planning and time and effort on my part. It truly takes no time at all.
This recipe is sweetened with a Clover honey that I purchased for the first time from Winco this past week. I was over in the produce section and saw three boxes that were labeled honey with spouts. Didn’t notice them the last few times I’ve gone shopping there. They also had a warning label not to open the top because there were live bees inside.
I must say, I was a little skeptical at first, but I saw a woman with her two kids going crazy over the orange honey. I decided to ask her if she purchased the honey before and she said yes all the time. So I decided I would try it. I probably should’ve asked a Winco employee if it was Raw or filtered honey but I didn’t. When I got up to the cash register, I asked the checker if a lot of customers buy the honey this way, she said yes. I ended up purchasing the Clover and a small amount of the Orange honey.
The granola is a little less crunchy than most, but if you want it more crispy, turn off the oven, leaving the door ajar and let it cool in the oven. This granola is great with milk, in a yogurt parfait, or on it’s own. We have been known to eat it by the handfuls.
Homemade Honey Almond Granola
Makes: 9 to 10 cups
- Vegetable oil spray
- 4 cups old-fashioned (not quick-cooking) rolled oats
- 1 cup oat bran
- 2 cups whole almonds, coarsely chopped
- 3/4 cup vegetable oil
- 3/4 cup honey
- 1 Tablespoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- 1 cup nonfat dry milk powder
- 1/2 teaspoon table salt
- 1 cup raisins or dried cranberries (optional)
- Preheat oven to 375 degrees.
- Spray two rimmed baking sheets with vegetable oil spray.
- In a large bowl, mix the oats, oat bran, and almonds.
- In a smaller bowl, whisk the oil, honey, vanilla, almond extract, dry milk powder, and salt. Fold in raisins or dried cranberries. (if using)
- Pour the mixture over the oats and stir, with your hands or a spoon, until well combined.
- Divide the mixture between the two oiled baking sheets and spread in an even layer. Bake for 20 min., stir, and switch the positions of the pans.
- Bake until the oats are golden brown and the nuts look well toasted, another 10 to 20 min.; do not overcook or it will taste burnt.
- Let cool completely in the pans. The oats may feel soft but will crisp as they cool.
Store the granola in the pantry in an airtight container, mason jar or freeze it for longer shelf life. It will keep up to three weeks in the pantry.
