- 2 cups dried beans — (mixed) washed & picked over
- 2 quarts water
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 16 oz can tomatoes
- 1 large onion — chopped
- 1 clove garlic — minced
- 1 chili pepper — chopped OR 1 teaspoon chili powder
- 1/4 cup lemon juice
- Chipotle powder , 2 drops liquid smoke flavoring, smoked ham hock or smoked sausage (adjust amount of Chipotle powder for your preferred tasting)
- Combine all ingredients except liquid smoke in slow cooker. Cover. Cook on low for 8 hours. Turn to high and cook an additional 2 hours or until beans are tender. (This is where you would use the liquid smoke flavoring)Stir in liquid smoke flavoring.
**If you are using a smoked ham hock or smoked sausage, combine at the same time as all the other ingredients and remove ham hock when soup is done.
