Spanish Rice

Ingredients:

  • 1 1/2 cups water
  • 1 Tablespoon butter
  • 3/4 teaspoon salt
  • 2/3 cup rice
  • 2 Tablespoons onion, minced 
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder

Directions:

  1. Bring water, salt, and butter to a boil in a medium-sized saucepan. In a separate bowl, combine the rice and all spices. Once the water is boiling, pour in the rice and spices, stirring constantly until it returns to a boil. Once in boils, turn down heat to very low, cover, and simmer for about 20 minutes. Turn off heat and let sit for 5 minutes, and serve.

This makes one dinner and one leftover lunch for our family, two adults and two grammer school children. If I know my two older kids will be home, I’ll double the recipe.
