This delicious combination of basil, lemon and lime make this Oven Roasted Chicken simple and delicious! A make-ahead meal that creates an easy weeknight meal.
Citrus Basil Oven Roasted Chicken
1 whole chicken (3 1/2to 4 pounds)
1 Tablespoon Olive Oil
1 Tablespoon Citrus Basil Rub
1/2 of a Lemon, juiced
Preheat oven to 325 degrees. Lightly rub olive oil on your baker. Remove and discard giblets and neck from chicken cavity. Rinse chicken with cold water and pat dry with a paper towel. Trim and remove any excess fat. Brush chicken with oil. I like to use a silicone basting brush.
Sprinkle Citrus Basil Rub on both sides of chicken. Place chicken breast side up in baker. Drizzle juice of lemon on chicken inside and out.
Bake for 2 1/2 to 3 1/2 hours. Check at 3 hours. Chicken should be tested with a thermometer and it should register 165 degrees in thickest part of breast and juices run clear. Remove from oven and cover with foil or baker lid and allow to rest for 10 minutes.
Recipe Note:You can make this recipe on the weekend or on a weekday you have a few hours of time in your schedule to cook and use leftovers for Chicken Pot Pies, Chicken Taco Bake, Enchiladas or even sandwiches.
