Corned Beef and Cabbage is a traditional St. Patrick’s Day recipe in many households. When planning my menu for this month, I found great savings on Corned Beef and Cabbage at Safeway. By reviewing the weekly grocery store ad, I was able to save some money on this hearty and tasty meal. Corned Beef Brisket was on sale at Safeway for just a $1.59 a pound. Great Savings! Over in the produce section, Cabbage was on sale for $0.23 cents and a bag of baby carrots were on sale for just $0.99 cents. I still had some baby potatoes in the pantry so my meal was complete.
Slow Cooker Corned Beef and Cabbage
1 Corned Beef Brisket with seasoning packet
1 head green Cabbage, chopped in quarters
1 bag of baby Carrots
8-10 baby potatoes, cut in half
Rinse Corned Beef Brisket under cold water, pat dry. Place brisket in slow cooker. Add water to cover, add seasoning packet. Turn slow cooker to low setting. Cook 10-12 hours or longer. I started this step last night so sinner would be ready around 6pm this evening. I added the potatoes and carrots to slow cooker this morning.
Two hours before serving, remove brisket and cover with aluminum foil. Chop cabbage in quarters and place in slow cooker two hours before serving and cook until tender.
Slice Corned Beef and serve with vegetables and a dollop of horseradish. Enjoy this hearty meal with your family. St. Patrick’s Day picture provided by our little princess.
