Most households grab a quick shower, get ready in a hurry, they may or may not eat a decent breakfast and fly out the door in an attempt to get the kids to school on time or to work by 9am. If this sounds like your morning routine, make sure a healthy breakfast is always included in that morning routine. As a busy mom, getting a quick nutritious breakfast on the table can be a challenge at times. Oatmeal is very nutritious and a great way to jumpstart the day not only for your kids, but yourself as well. Add in some fruit and your on your way to a better day.
Blueberry Banana Oatmeal
Ingredients:
3 cups water
1/2 teaspoon salt
2 cups quick oats
1/3 cup brown sugar
1 teaspoon maple syrup
1 cup blueberries, rinsed and drained
1/2 cup regular soy milk
1 banana, sliced
1/4 cup chopped walnuts
Directions:
In a medium stock pot, bring water and salt to a boil. Add oats and reduce heat to low. Add brown sugar, syrup and blueberries, stirring until bluberries are heated. Add soy milk and continue to cook until oats thicken. Top with a couple of bluberries, sliced bananas and chopped walnuts.
*Recipe Note: Any type of fruit would be a good choice. Whatever is in season like strawberries, peaches, apricots or raspberries.
