Do you every have those nights where you’re just too tired to cook? Want something quick and easy? How about craving breakfast for dinner? Tonight just happened to be one of those nights. Having a busy day at work, I wanted something quick and easy for dinner but filling enough that the kids wouldn’t say, “I’m hungry” an hour later. So I looked in the cupboard and found some rice, cooked according to directions, made a little bit of bacon and fried some eggs. I never would have thought about having fried eggs and rice 10 years ago. I would have had the fried eggs and bacon for dinner but never would have imagined the rice with the eggs.
It happened when I met my husband. He took me on a camping trip up here in the Sierra Foothills, where his grandparents used to own property. My husband’s grandparents sold their property to a young couple, who allowed us to come up during the summer. One day we were visiting and the man who owned the property, Ken, was eating his meal. Didn’t think anything about it until I looked down and saw he was eating fried eggs over rice. The eggs were cooked medium-well so the yolk was running over the rice. I thought to myself, I can’t believe he’s eating that. A year later, I was trying to come up with a meal that was quick, easy and filling. I had enough rice in the house to feed an army and eggs so I thought to myself, okay, let’s try this. So I made the rice and cooked fried eggs to go with it. Our family has been eating this meal ever since. You can serve it with bacon; salsa or we even add a little chili sauce.
