Food Storage and a Weekly Meal Plan May 19-25, 2013

Meal Plan for easier meal times, healthier eating and spending time with the family.

Another busy week is upon us as we come to the final weeks of a school year. Our daughter qualified for honor roll this year and is attending a fun trip to sunsplash at the end of the week with fellow honor roll students. She is super excited. A great way to start a birthday weekend. She turns 10 next week.  Our son is busy putting together his poster board for his display and report on Poland. His deadline is later in the week. For us, it’s another busy week of shipping off orders for the thrift store and adding new inventory daily. We shipped off  8 orders from this past weekend today.

I want to make sure dinner is on the table and meal planning sure makes it easier for meal times. This week I evaluating our food storage items and rotating stock.  In deciding what to make, I opened the pantry and grabbed a few food storage items that I needed to use up and worked them into our menus. Don’t be surprised if I start sharing how we’re rebuilding our pantry and creating an emergency food storage. It’s something that has been on my mind for a while now.

Meal Plan

I meal plan at the beginning of each week. For me, it’s Sunday mornings (yes, even on Mother’s Day) when the house is quiet and everyone’s still sleeping. Even though I meal plan every week, (for many reasons I do-here is how I keep it simple) I try and manage a decent frugal grocery budget and not go to the grocery store on a weekly basis unless we need dairy products like milk. Weekly meal planning saves our family money, reduces food waste, and keeps us from the urge to say, “Let’s eat out!” If you are in need of more reasons to meal plan every week,check HERE.

Cooking and eating together is a great satisfaction that often disappears with the busy schedules of families. Working outside of the home has always been a necessity for most adults these days and enjoying the food we create together is a way of connecting with one another.  Our kids cook dinner once-a-week and do the clean-up after the meal. Sunday:  Sunday Supper~Hamburgers, Macaroni Salad

Monday: Bean and Rice Bowls with toppings~Frugal and Easy!

Tuesday:  Spaghetti with Homemade Sauce, Apple Muffins with Flax seed, Green Salad, Canned Corn

Wednesday: Crock Pot Potatoes topped with chili and cheese– simple recipe to make; it’s affordable and a dollar stretching meal!

Thursday: Crock Pot BBQ Chicken, Jalapeno Cornbread Stuffing, Spinach Salad with Strawberries and Mandarin Oranges

Friday: Family Favorites Night~ Swedish Pancakes with fresh fruit (Our daughter is making dinner tonight)

Saturday:  Hashbrown Egg Bake, Cantaloupe, Leftover Apple Muffins (Our son is making dinner tonight)

Dessert of the Week:

We still have an abundance of lemons so

Meal Plan

I meal plan at the beginning of each week. For me, it’s Sunday mornings (yes, even on Mother’s Day) when the house is quiet and everyone’s still sleeping. Even though I meal plan every week, (for many reasons I do-here is how I keep it simple) I try and manage a decent frugal grocery budget and not go to the grocery store on a weekly basis unless we need dairy products like milk. Weekly meal planning saves our family money, reduces food waste, and keeps us from the urge to say, “Let’s eat out!” If you are in need of more reasons to meal plan every week,check HERE.

Monday: Asian Chicken Noodle Salad~Frugal and Easy!

Tuesday:  Grilled Cheese Sandwiches with Homemade Tomato Soup (I made my own American cheese too! Recipe posting later)

Wednesday: Scrambled eggs and veggies– simple recipe to make; it’s affordable and a dollar stretching meal!

Thursday: Pinto beans and shredded chicken over brown rice and fresh tomato salsa

Friday: Family Favorites Night~ Homemade Pizzas-serve with veggie platter (Our daughter is making dinner tonight)

Saturday:  Stir fry spicy chicken with green beans and orange sauce (Our son is making dinner tonight)

Dessert of the Week:

 Lemoney Lemon Brownies-Like Brownies but made with lemons (a huge hit on Mother’s Day)

With as busy as we’ve been for the past two weeks, getting our online and local thrift & consignment business  running it’s so helpful to have meal plans that are flexible and easy. This week,  I’ll be roasting another chicken in the crock pot for a couple meals this week and soaking another batch of pinto beans overnight to cook and include in my meal plan.

It started raining today so it’s a perfect day for me to restock and get some pre-packaged mixes made for the pantry.

Here’s our meal plan for the week:

Monday: Crock Pot Turkey, Rice and White Bean Soup*(freezer meal)~Frugal and Easy!

Tuesday:  Make-Ahead Casserole-French Toast; serve with cottage cheese and fruit

Wednesday: Baked Chicken Chimichangas– simple recipe to make; it’s affordable and a dollar stretching meal!

Thursday: Goulash; Serve with homemade rolls.)

Friday: Family Favorites Night~ Homemade Pizza-serve with veggie platter

Saturday: Chicken Pot Pie -serve with cornbread.

Dessert of the Week:

 Vanilla Ice Cream with Homemade Caramel Sauce

Dollar Stretcher Family Meals and a Weekly Meal Plan April 21-27, 2013

Dollar Stretcher Family Meals sounds unrealistic to some, but if you are looking to cut costs on your grocery bill or simply just can’t afford to spend the money, these types of meals come in quite handy and soon become a way of life. For us, the first thing we had to do was have the desire to change our way of thinking on how our family spends money on groceries and eats. At first we just did it because it was good for our health, finances, and peace of mind, But soon we started to love this frugal lifestyle.

If we look at the rewards of any goal, it helps us to stick with it. So I’ve been thinking of ways our family can continue living frugally and eating from our “home food storage”. With the money we save, we would have more money to have better health, peace of mind, and a safety net for our family.

In order to continue to accomplish living frugally, we’ve mapped out a plan to:

  1. Grow and Preserve our Family Garden
  2. Buy Foods In Bulk- right now I’m researching websites including Amazon to buy more of our foods in bulk starting with powdered milk.
  3. Continue to Cook our Family Meals from Scratch
  4. Learn to Love Eating Whole Foods-this means trying something new that is more healthy ex: new vegetable or other types of foods.
  5. Eat Sale Priced Foods- we will grow our food storage by buying foods that are on sale.
  6. Cut down our trips to the grocery store
  7. Continue to Eat at Home-Dinner at the table

By continuing or starting these steps, we can continue to live frugally and have Dollar Stretcher Family Meals.

Sunday:  Sunday Supper~Roasted Chicken Breasts, Parmesan Cheese Risotto, Steamed Broccoli

Monday: Cheesy Beans & Rice Casserole(we get our rice in bulk and it’s a great staple)~Frugal and Easy!

Tuesday:  Chicken Crescent Rolls – really simply, serve with salad wedges

Wednesday: Poor Boy Casserole – simple recipe to make; it’s affordable and a dollar stretching meal!

Thursday: Pasta Hamburger Casserole- serve with applesauce and fresh veggies (sounds like a lot of casseroles for one menu, but casseroles were made to be  frugal and they tastes good. Serve with homemade rolls.)

Friday: Family Favorites Night~ Homemade Pizza-serve with veggie platter

Saturday: Shepherd’s Pie -serve with cornbread.

Dessert of the Week:

Gelatin Poke Cake made with Homemade Yellow Cake mix

I think I’ve mentioned a few times our schedule at home has been pretty busy. The re-start up of our Thrift & Consignment Store has kept us quite busy over the past few weeks and come dinner time I’m pretty wiped out. That’s why I love my crock pot!

I’m keeping this week’s meal plan pretty simple and still not breaking the grocery budget by Cooking Meals On Less and with the weather as nice as it’s been, I’m hoping to start grilling out back soon.

Monday: Pancakes- it’s not from the crock pot but it’s simple and quick to make

Thursday: Macaroni and Cheese Casserole - serve with applesauce and fresh veggies (yes, it’s on the menu again but it’s cheap, frugal and tastes good. Serve with homemade rolls.)

Friday: Family Favorites Night~ Hum Baby Burritos-using leftover beans and rice from Tuesday night

Saturday: Cincinnati Chili -serve with cornbread.

Homemade Yellow Cake with Fruit & Cream
