Week 1 of the Just In Time Family Meal Planning Challenge!

Welcome to our first week of Just In Time Family Meal Planning Challenge!

As we move into the first week of our meal planning challenge, for February, my goal is to make a lot of meals in 30 minutes or less during the weeknight and for those weekend days when I just want to slow down, let the meal take it’s own sweet time; whether it be cooked in the crock pot or slowly roasted in the oven.

We’ve started off the week with an easy Sunday meal of BBQ Chicken Sliders topped with cole slaw. It was nice having an easy meal after a busy weekend of celebrating our son’s birthday with family and friends. There’s just enough leftovers for lunch later in the week.

Last week, I got pretty well stocked up on many of my pantry items, adding a few new items to my pantry:

  • artichoke hearts
  • Greek Kalamata olives
  • roasted red peppers
  • chipotle peppers in adobe sauce

I don’t normally keep ingredients like these on hand but after watching Pioneer Woman’s Stocking The Pantry episode, I was inspired to give a few of her ideas a try like using the chipotle peppers in adobe sauce in this Spicy Dr. Pepper Shredded Pork recipe.

Here’s what the rest of the week’s menu looks like: (recipes will be shared throughout the week as this is a new meal plan for us.)

Monday: I’m making  Sloppy Jose’s; a Mexican type twist to the good old fashioned Sloppy Joes. (I was inspired with this idea  from making a 7-layer bean dip on Saturday for our son’s birthday party. Using leftovers from this dip with ground beef and tortillas.

Tuesday: Curried Chicken and Apple Stew over Rice

Wednesday: Spaghetti Casserole

Thursday: Blender Cheese  Soufflé

 Friday: Cheese Steak Pizza

 Saturday: One Potato, Two~ So easy you can double the recipe for more. Our kids love these!

As you’re putting together your weekly meal plan, remember that there are some items that are always going to be on sale during the month. Be sure and check your local grocery store ads for what’s on sale in your area.

It’s National Oatmeal Month!  So if you haven’t already, stock up for making favorite recipes like my Quick Handy Breakfast Oatmeal Packets and Sweet Apple Oatmeal and Coconut Cookies.

  • Granola Bars
  • Granola Cereal with dried fruits like cranberries, blueberries or apples
  • Fiber Bars
This month is also a great opportunity to stock up on those Super Bowl Party Foods. No, I’m not talking about the chips and soda. Grocery stores have items on sale:
  • Lunch meat for sandwiches
  • Cheese
  • Chili ingredients (Try my Chili in a Bread Bowl recipe)
  • Snack items
  • Crackers
  • Popcorn
You should also find great sales on several food items that we naturally associate with winter weather and colder temperatures:
  • Hot Teas
  • Hot Cider
  • Hot Cocoa Mix (homemade recipe posting soon)
  • Soups, Stews and Chili

Weekly Menu Plan, Grocery List and Recipes:Cooking From The Pantry

The menu for the week shares easily prepared recipes made directly from the pantry. We all have experienced when our pantry is overstocked or there is meat in the freezer that you need to defrost and cook. Many times I’ve been tempted to try new recipes and go out for new ingredients, but I’ve learned to manage the kitchen to shop and cook from my pantry to use those ingredients before they expire or go bad.

Cooking from the pantry is an excellent way to get meals on the table when time is short and you can’t get to the store, when dinner ideas have dwindled or if an unexpected supper has to be whipped together.

Cook From The Pantry

Cooking from the pantry, leads you to lots of home cooking and creativity. You also control how much you spend on groceries. An organized, well-stocked pantry  is the first step, but once that’s established, creative, delicious dinners are just minutes away.

Taco Rice with Beans and Corn

Beans and Rice are regular staple in our house and these key ingredients are always found on the weekly menu. Sometimes they are a side dish and sometimes they just make it as the main meal. That’s why I love the fact that these three key ingredients work so well together. With Homemade Taco Seasoning Mix this is one of my Fast Fix Meals on any night of the week.

 Taco Rice with Beans and Corn

 Serves 6

Ingredients:

  • 4 cups water
  • 2 cups rice
  • 2 Tablespoons taco seasoning mix (store bought or homemade)
  • 1 cup black beans or pinto beans
  • 1 cup corn kernels (frozen or can)

Directions:

  1. In a stock pot over medium-high heat, bring water to a boil, add rice and taco seasoning. Stir until combined.
  2. Quickly add black beans and corn, stirring until combined. Cover and reduce heat to low.
  3. Cook for 25 minutes. Fluff lightly with a fork.
  4. Serve as a main dish or side dish.

*Garnish with tomato and cilantro (optional)

Weekly Menu Plan, Grocery List and Recipes

New Feature-Printable Grocery List and Meal Plans!

I love to meal plan! Discovering new foods and ways of cooking is a fun and a rewarding hobby of mine. So that’s why I’m excited to finally be able to introduce a new feature on Noel’s Kitchen Tips. I’ve been wanting to offer my readers and add to the Noel’s Family Meals membership for so long but never found one with features I liked or thought would be beneficial to busy families in helping make meal planning easier.

My recipe index is expanding and I finally have a new system for sharing meal plans, grocery lists, nutritional information and a place for my readers and members to store your favorite recipes. It’s extremely easy to use and I believe you’ll enjoy this new feature.

Say Hello To Say Mmm!

I’m happy to introduce I’ll be adding the meal planning service with tools on Say Mmm to help me in planning meals and sharing with you. With this feature, you’ll be able to organize your favorite recipes and shop easily for groceries. There’s many useful tools to help busy families like you, including the printable grocery list feature that is absolutely FREE!

Soon, you’ll be able to find a printable grocery list next to each recipe on my Recipe Index. You’ll notice that when you click on “print grocery list” beside the recipe you like you’ll be taken to the Say Mmm site where you can either edit the grocery list or print it off.  Even better, the fun doesn’t end there because once you have one recipe added you can keep adding recipes to it.  When you are done, you simply print the full list off and away you go to the grocery store. You even have the option to play around with the format or save your list for another time.  However if you do want to save your list you will need an account, otherwise you don’t.  It’s so easy to use and I’m thrilled to offer this menu planning feature to my readers.
