Cooking from My Pantry and a Weekly Meal Plan January 6-12, 2012

This week, it’s back to reality for us. After a week long vacation, it’s time to go back to work, school and the duties of our daily lives. We had a great time and are looking forward to going back in the near future. During our vacation last week, we were very well spoiled and had a breakfast buffet at the hotel every morning. I brought our smaller crock pot which was perfect in having a comforting meal when we came back from the park for a rest. We also had three days where the hotel put on a family mixer and put on a small display of food. We were able to stick to somewhat of a meal plan and save some cash.

Before we left, I cleaned up our fridge and freezer and rotated stock in preparation of us being gone for the week. No one wants to come back from vacation to see spoiled food in the fridge. I did however, pull a few things like spaghetti sauce from the freezer in case our niece wanted to make spaghetti. (she was house sitting for us) So this week, we’re eating down the pantry to use what we have.

Here’s our plan for the week.

My weekly meal plan and shopping list is completed and posted on our fridge:

Breakfast options: 

(served with fruit)

French toast casserole
Pancakes
Waffles
Biscuits and Sausage Gravy
Cereal
Scrambled, Fried, or Hard-Boiled Eggs
Breakfast Burritos
Quiche
English Muffins
Homemade Bread
Biscuits
Muffins
Breakfast Cookies
Mini Apple Pies or Turnovers

 Lunch options:

Sandwiches or Wraps (Tuna salad, egg saladchicken salad, turkey salad, leftover meats, grilled cheese, blt, pb&j)
Quesadillas
Smoothies
Leftovers from dinner
Salad
Baked Potato
Homemade Pizza Pockets

Suppers Your Family Will Love

Need ideas for your weekly meal plan? It’s time for another weekly menu.  I enjoy menu planning because of  the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to  have more free time to focus on my family and home. For ideas in the weekly meal plan, we’ll be focusing on a variety of family meals. You’ll find the recipes on the weekly meal plan also available on my Recipe Index page with a grocery list included.

Dinner (recipes will post throughout the week, given time to cook and photograph :) )

Note: an asterisk* means it’s from the freezer

Sunday:  Sunday Supper~Scrap Soup (using some leftover ingredients from the fridge our niece didn’t use and pantry)

Monday: Budget Twice Baked Potatoes casserole; making extra for freezer and I’ll use leftover pulled pork* from the freezer along with some frozen spinach as a topping.

Tuesday:  Breakfast for Dinner~Pancakes, Apple Slices

Wednesday: Tex Mex Rice (using leftover shredded pork), Cornbread (yes, it’s on the menu again)

Thursday: Honey Garlic Chicken and Broccoli,  dinner rolls

Friday: Family Favorites Night ~Crock Pot Pizza, salad

Saturday: Bean Soup,* Crusty French Bread
