Family Favorites with a Lighter Touch and a Weekly Meal Plan October 7-13, 2012

Hi Everyone! Hope you enjoyed your weekend with family and friends! Do anything fun? We kicked off our weekend with our son coming home from science camp last Friday. Boy, did we miss him!

On Saturday, we spent a majority of the day with a booth at our school’s swap meet and e-waste fundraiser. It was a great turn out for all who participated and we filled a little more than one bin full of e-waste. We not only raised money for our school but we also added extra funds to our Disneyland trip at the end of the year.

This week’s menu, is a collection of traditional family favorites with a big difference. They’re light and they’re simple. I’m transforming those childhood comfort foods into updated, healthier versions than you can prepare easily and quickly allowing for more time with family and friends around the table.

My weekly meal plan and shopping list is completed and posted on our fridge:

Breakfast options:

Green SmoothieMuffins, Fresh Fruit, Homemade Greek Yogurt, cereal, toast, and eggs

Lunch options:

Chicken Salad Sandwiches, Pizza bagels, leftovers, protein shakes, salad, fresh cut veggies and/or fruit

Suppers Your Family Will Love

Need ideas for your weekly meal plan? It’s time for another weekly menu.  I enjoy menu planning because of  the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to  have more free time to focus on my family and home. For ideas in the weekly meal plan, we’ll be focusing on a variety of family meals. You’ll find the recipes on the weekly meal plan also available on my Recipe Index page with a grocery list included.

Dinner (recipes will post throughout the week)

Sunday:  Sunday Supper~Crock Pot Chicken Parmesan (look for the recipe this week)

Monday: Easy Black Bean Chili

Tuesday: Turkey Loaf with Garlic Mashed Potatoes

Wednesday: Quick Minestrone Soup, Fresh Homemade French Bread

Thursday: Italian Chicken Pasta Toss, Side Salad, Crusty Loaf of Bread

Friday: Family Favorites Night ~Spicy Joe Pizza, Green Salad

Saturday: Cajun Stuffed Peppers
