Cheap and Easy Recipes ~ Weekly Meal Plan September 30-October 6, 2012

Hi friends! Hope you had a great weekend! Did you do anything fun? Saturday, I took my camera down to Best Buy for repair. The shutter wasn’t opening properly and I wasn’t able to take many pictures this past weekend. I’ll have too resort back to my smaller digital camera for the upcoming week. I have to mention that I’m so glad I purchased a 3-year warranty on my camera. It might not be repairable so I may end up getting a new camera. We’ll see what the Geek Squad says.

After arriving back home, I started in on laundry and a few other household chores and helping our 6th grader pack for science camp this week. He’ll be away from us for a whole week. We crossed off eveything on the list of what to bring with a few extra items.

This week, I’m sharing my family’s favorite fast, frugal…fabulous meals! I’m creating delicious comforting meals that S-t-r-e-t-c-h our budget!  (This may be a theme for one of my local cooking classes in the future.)

My weekly meal plan and shopping list is completed and posted on our fridge:

Breakfast options:

Green SmoothieMuffins, Fresh Fruit, Homemade Greek Yogurt, cereal, toast, and eggs

Lunch options:

Chicken Salad Sandwiches, Pizza bagels, leftovers, protein shakes, salad, fresh cut veggies and/or fruit

Suppers Your Family Will Love

Need ideas for your weekly meal plan? It’s time for another weekly menu.  I enjoy menu planning because of  the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to  have more free time to focus on my family and home. For ideas in the weekly meal plan, we’ll be focusing on a variety of family meals. You’ll find the recipes on the weekly meal plan also available on my Recipe Index page with a grocery list included.

Dinner (recipes will post throughout the week)

Sunday:  Sunday Supper~Crock Pot Roasted Chicken, Roasted Potatoes and Carrots

Monday: Meatless Monday~Stir Fry Vegetables with Brown Rice

Tuesday: Quick Pizza Casserole

Wednesday: Simple Scrumptious Frittata

Thursday: Leftovers~Using chicken from Sunday night - Crispy Taco Chicken

Friday: Family Favorites Night ~Chili-Cheese Dog Casserole

Saturday: School Swap Meet and E-Waste Fundraiser~Meals Made Easy-Homemade Pizza Dough with Homemade Pizza Sauce topped with leftovers from the fridge and fresh veggies

    I love to cook, but I find it difficult, as a single working, person, to plan my meals on a weekly schedule, and eat healthy. I do try to prepare and eat a dinner salad at least once a week. Also, I try to make Fridays my day for fish. Actually, I am trying to introduce salads and fish (nonfried) into my diet more often than once a week.

    Still, regardless of how I plan, I find myself making out my weekly menu at the grocery store. I’ve enjoyed your blog. As I’ve perused your pages I think I’ll be able to use your menu suggestions to help make my life a little easier.

    You’re off to a great start! And it sounds like you’re implementing healthy food choices, which is very important for someone who is always on the go. Planning meals is not suppose to add stress to anyone’s schedule whether your planning for one or a family. Since you plan your menu while at the grocery store, you’ll find if you haven’t already grocery store phone apps that help you plan your meals and grocery shop. I’ve found them very useful.
