Happy Monday Everyone! I hope you all enjoyed your weekend! Well, this past weekend was for the kids and their friends coming over. For us, it was about catching up from the week. Though we did get a few lazy hours on Sunday afternoon.
Friday, I started our batch of Homemade Greek Yogurt for this week’s breakfasts and lunches. As well as trying to get a bunch of those daily household chores caught up on so that I could have a weekend with the family.
Sunday evenings I have been of doing chopping and a bit of cooking. Once again to save some money and to prepare for this week’s meal plan preparing veggies, fruits and some chicken, boiled eggs or some other protein for lunches for the week.
My weekly meal plan and shopping list is completed and posted on our fridge:

Breakfast options:
Bananas, Homemade Greek Yogurt, Green Smoothie, cereal, Homemade Granola, toast, eggs, Breakfast Burritos, and/or fresh fruit
Lunch options:
Leftovers, sandwiches, Tortilla Rollups (aka “Prairie Sushi”), protein shakes, salad, fresh cut veggies and/or fruit

Need ideas for your weekly meal plan? It’s time for another weekly menu. I enjoy menu planning because of the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. Dinner (recipes will post throughout the week)
Sunday: BBQ Ribs, Crock Pot Macaroni and Cheese
Monday: Breakfast for Dinner!~ Corn Pancakes
Tuesday: Garden salads with baked potato bar
Wednesday: Mix and Match Burger Bar, Pasta Salad, Homemade Potato Chips
Thursday: Rice and Bean Bowls with Homemade Salsa
Friday: Family Friday Night~Homemade Pizza
Saturday: West Nugget Rib Cook-Off in Reno, NV.
