Happy Monday Everyone! We had a pretty busy family weekend and I didn’t get to start on our weekly meal plan until early this morning.
We got off to an early start to the weekend on Saturday and headed to Reno, Nevada for the last weekend of Hot August Nights andthe huge swap meet at the convention center. Later we headed to Virginia Street to check out the display of classic cars. Then on Sunday, we spent the early afternoon doing some last minute school shopping and I was able to squeeze in my weekly grocery shopping for the next two weeks.
This week, with school starting up, it’s time to scramble up meals that are quick and easy. A back to school cooking plan really helps your sanity and is crucial for our family to keep us on schedule throughout the school year.

Need ideas for your weekly meal plan? It’s time for another weekly menu. I enjoy menu planning because of the simplicity it provides for my life. It enables me to decrease my grocery shopping excursions to twice a month and it allows me to have more free time to focus on my family and home. Dinner (recipes will post throughout the week)
Sunday: Hamburgers, Salad
Monday: Breakfast for Dinner! Homemade Hashbrown Quiche, Applesauce Muffins and Breakfast Burritos. (I’m making extras for the freezer to pull out later in the week.)
Tuesday: Easy Sliders and Herbed Potato Fries
Wednesday: Spaghetti and Meatballs, Garden Salad
Thursday: Back to School Night - Turkey Sub Sandwiches, Veggie Platter
Friday: Pizza Night! Homemade Pizza on Homemade Pizza Dough, with Homemade Pizza Sauce, both on hand in my freezer. we’ll top with whatever is leftover in the fridge from the week. Cheezy Garlic Breadsticks and Salad.
Saturday: Black Bean Enchiladas
