Homemade Bread Machine Rolls and a Weekly Meal Plan July 2-6, 2012

At the beginning of last week, I planned our weekly menu keeping in mind our $150 week grocery budget. Since I don’t go shopping every   week, I set aside a $300 minimum for our grocery budget over the next two weeks. However, with a little extra planning and my Master Meal Planning List, I’m able to stretch our groceries even farther than two weeks.

Over the weekend, we were hard at work with our family garage sale, weeding out a lot of our thrift store items from our thrift store Grumpy Treasures. We only planned to have the sale on Saturday but decided to extended it through yesterday. It worked out great because we added money from the sales to our Family New Year’s Disneyland trip at the end of the year.  The thrift store is still a work in progress but it’s coming along. We’ve done Ebay for years and a few months ago decided to open our own thrift shop. It’s fun finding new treasures for the store and I love the old kitchen items I come across.

I didn’t get much meal prep prepared for this week as I would have liked, however I was able to get a little bit of baking in. Starting with these simple Homemade Bread Machine Rolls. since we were busy with the garage sale, it was so easy to throw some ingredients in the bread machine to do most of the work.

Homemade Bread Machine Rolls

Ingredients:

  • 1 cup warm water
  • 2 Tablespoons melted butter
  • 1 egg
  • 2 Tablespoons sugar
  • 1 Tablespoon instant dry milk
  • 1 Tablespoon Kosher salt
  • 3 1/4 cups flour
  • 1 teaspoon honey
  • 1 Tablespoon bread machine yeast
  • 1 Tablespoon butter melted, set aside for brushing rolls

Directions:

  1. Put ingredients in the order listed into the bread machine. Run on the Dough cycle. After the cycle is finished take out the dough and form it into balls.
  2. Let them rise in a warm place for 40 minutes.
  3.  Bake at 375F for 12-15 minutes.
  4. After you take them out of the oven brush melted butter on the tops and the sides.

Dinner (recipes will post throughout the week)

Sunday: BBQ Chicken Sandwiches made from the Crock Pot Roasted Chicken

Monday: Tomato & Herbs Marinated Tilapia (new recipe sample test for Raley’s)

Tuesday: Taco Casserole and for dessert, bananas sprinkled with lime juice and brown sugar

Wednesday: 4th of July BBQ 

Thursday: Easy Chicken Fried Rice using leftovers from Sunday’s dinner

Friday: Pizza Night! Homemade Pizza Dough with Homemade Pizza Sauce

Saturday: Bean, Beef & Cheese Burritos using Homemade Tortillas
