This week is all about investing in a little more in the beginning of the week to save you time in the kitchen and add some excitement to your dinner menus with great tasting recipes for the week. Here’s a layout of recipes I’ll be sharing using make-ahead ground beef with you this week and part of the Just In Time Family Meal Planning Challenge.

Make-Ahead Ground Beef
Ingredients:
5 pounds lean (90%) ground beef
Directions:
- Place ground beef in a large skillet. Cook over medium heat 14-16 minutes or until no longer pink, breaking beef into crumbles; drain.
- Place 2 cups cook beef in a resealable bag for later use. (We’re making Shepherd’s Pie)
- Place 1 2/3 cups beef in freezer bag for later use. (Zesty Taco Ring Bake)
- Label bags and freeze for 2-3 months. Use remaining 2 1/2 cups beef for tonight’s dinner (Tamale Pie.)
