
Potatoes are the classical American side dish, filling up that section of the plate between the meat loaf and the green beans. A potato is rich in protein and Vitamin C and has only a modest number of calories, 100 for a five-ounce baked potato.
A Potato as a Meal
We love the flavors of Mexican style food at our house. Not everything is “authentic,” the dishes are more Americanized but typically they are delicious. Homemade salsa and taco seasoning is a staple in our house. One of the side dishes I make is Seasoned Potato Wedges. (Check the Recipe Index for recipe.) They are easy to make and flavored with Taco seasoning. We’ve eat them for breakfast, lunch and dinner.

Yesterday, I found myself working on the many projects and features I have in store for Noel’s Kitchen Tips.com. By the time I looked up at the clock, it was almost time to prep for dinner. Opening my freezer, I found some Taco Meat prepared last weekend on my freezer cooking day and some Yukon Gold potatoes in the pantry. So I made my Seasoned Potato Wedges and heated the Taco Meat, grabbed some cheese, sour cream, tomatoes and jalapenos and Ta da! Potato Nachos!
Potato Nachos Recipe
Ingredients:

one batch Seasoned Potato Wedges

2 cups Taco Meat (shredded beef or pork would work too)

shredded Cheddar or Mozzarella cheese

diced tomatoes

sour cream
-
jalapenos (optional)

sliced olives (optional)

chopped green onion (optional)
Directions:
