Making Strides Against Breast Cancer:A Family Meal Planning Cookbook For A Cause!

I’m joining in to create a world with less breast cancer and more birthdays!

Why am I walking?

Today, there is more hope than ever for people facing breast cancer. However, there is much work to be done. Every day, the American Cancer Society is helping people stay well by taking steps to reduce their risk of breast cancer or find it early, when it is most treatable; helping people get well with information, day-to-day help, and emotional support to guide them through every step of a breast cancer experience; by finding cures and promising new treatments through funding and conducting research; and by fighting back by working with lawmakers to help all women get access to screenings and care.

I believe that one day, breast cancer will never steal another year from anyone?s life ? and we will live in a world with less breast cancer and more birthdays. That?s why I’m walking in the American Cancer Society Making Strides Against Breast Cancer event. Not only is this my opportunity to join my community to fight back against breast cancer, it is a way to inspire hope by raising funds and awareness to help those facing the disease and save more lives.

And you can be a part of it, too.

I have signed up to walk on Sunday, October 17, 2010 in Sacramento, CA.  and I hope you will join me in my effort by signing up to join my team, Babes For Boobs or making a donation in support of my participation, by visiting my personal page. National Lasagna Day:Messy Lasagna

National Lasagna Day

In celebration of National Lasagna Day, I wanted to share another one our our favorite Lasagna recipes. My family enjoys Lasagna and is always asking for seconds. This is an easy recipe for busy families and could be made on a meal planning day and frozen.

Messy Lasagna

Ingredients:

1 pound ground beef

1/2 pound Italian sausage links, casings removed

1/2 cup onioned, chopped

2 garlic cloves, pressed

3 cups , 2 ounces  (26 ounces) marinara sauce (homemade is better and can be made on your meal planning day)

4 eggs

1 32 ounce container ricotta cheese (can substitute with cream cheese)

2 cups (8 ounces) mozzerella cheese

1/3 cup grated parmesan cheese

2 Tablespoons fresh parsley

1/2 teaspoon salt

1/2 teaspoon pepper

1 16 ounce package lasagna noodles

Extra parmesan cheese for topping

Directions:

Preheat oven to 375 degrees. In a large 8 quart stockpot, bring water to a boil. Cook lasagna noodles according to package instructions.

In a large saucepan, heat oil. Add onion, garlic, beef and sausage, cooking over medium heat until meat mixture is no longer pink.

Add sauce. Bring to a boil, reduce heat and simmer 25-30 minutes.

In a 2 quart mixing bowl, lightly beat eggs with whisk. Add ricotta (or cream cheese & cottage cheese), parsley, Parmesan cheese, salt and pepper.

To assemble lasagna, place 2 Tablespoons of sauce on the bottom of a rectangular baker/dish. Top with meat mixture. Spoon ricotta mixture over sauce. Sprinkle mozzerella cheese over ricotta mixture. Repeat layers. Top with Parmesan cheese. Cover with foil.

Bake for 30 minutes. Uncover and bake for another 15-20 minutes or until cheese on top is slightly brown. Serve.

*Recipe Note: If frozen, cook for 45-50 minutes.

Crispy Mexicali Salad

Crispy Mexicali Salad

Fresh vegetables and black beans are united in this salad with a zesty Cilantro-Lime Vinaigrette.  It’s light, colorful, crunchy and full of zesty flavor. Very easy to make and tastes delicious!  This salad is the perfect compliment to fajitas. Part of our Keep it Cool summer recipe ideas.

Ingredients:

  • 1 head Red Leaf lettuce
  • 1 tomato, diced
  • 2 green onions, sliced
  • 1 red bell pepper, diced
  • 1 cup black beans
  • 1 cup fresh corn (I used leftovers from our corn on the cob)
  • 1 cup cucumber, diced
  • 1 avocado, diced
  • Tortilla chips, shredded for topping
  • Cilantro Lime Vinaigrette (recipe below)

Directions:

  1. In a large salad bowl, add above ingredients in order listed.  Serve with Cilantro Lime Vinaigrette.

Recipe Note:  For a heartier main dish salad, 2 cups diced cooked chicken  or shredded beef can be added, if desired. This salad can be made up to 24 hours in advance. Cover with plastic wrap and store in the refrigerator.

Cilantro Lime Vinaigrette

Ingredients:

  • 1/2 cup chopped cilantro
  • 1/4 cup vegetable oil
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon water
  • 1 Tablespoon apple cider vinegar
  • 2 cloves garlic, pressed
  • 1/2 teaspoon organo
  • 1/2 teaspoon Southwestern Seasoning Mix
  • Salt and pepper to taste

Directions:

  1. In a small bowl, whisk together ingredients. Wrap with plastic wrap and place in refrigerator for one hour to incorporate the flavors.

Easy Slow Cooker Family Suppers:Pulled-Pork Tacos

Easy Slow Cooker Family Suppers

The slow-cooker as I”ve said in so many of my previous posts is truly a time-saving resource for when you don’t have a lot of time to spend in the kitchen. It’s a great kitchen tool that helps busy families make those budget-friendly hearty meals, snacks and desserts.  Yesterday, our family spent a beautiful morning shopping and came home to work on a few household projects. I was able to throw this meal together in 15 minutes before we left the house.  Below is a recipe for Pulled-Pork Tacos, which has great flavor and the cilantro makes this meal refreshing.

 

 

Slow Cooker Pulled Pork Tacos

Ingredients:

1 3 1/2 pound pork shoulder roast

2 cups of your favorite salsa, plus more for serving

1 cup of your favorite beer

1/2 cup sliced onion, plus more for serving

2 Tablespoons Taco seasoning

1 Tablespoon cooking oil

12 Corn or flour tortillas

Sour Cream

Cilantro

1 Lemon or Lime

Directions:

Optional: Trim excess fat from pork shoulder roast. ( A little fat will add more flavor to the meat.)

In a saute’ pan, heat cooking oil and add pork shoulder roast and sear on all sides. Drain off any cooking oil. Sprinkle Taco seasoning over the entire pork shoulder roast.

In a 6-quart slow cooker on low setting  add onions, beer and 1 cup salsa.  Stir ingredients together. Add pork shoulder roast and turn to coat. Add 1 more cup of salsa.

Cook until meat is tender and pulls apart easily 6-8 hours. Warm torillas in the microwave or oven 20 minutes. wrap in foil to keep warm. Shred the pork while still in the slow cooker and stir.

Serve on warm tortillas with extra salsa, sour cream, cilantro, lemon or lime and a glass of lemonade or ice tea.
