Casual Cooking:Pork Loin With Brown Sugar Pineapple Rum Glaze

When the weather turns warm, my attention usually goes to outdoor grilling or simmering something delicious in the slow cooker. To me, it’s always been time spent in the kitchen entertaining with family and friends is the best part of the day. This Pork Loin recipe is not only savory but sweet. My huband asked if I put jelly in the recipe to make it this sweet. The gravy is the perfect compliment to this delicious meal.

Pork Loin With Brown Sugar Pineapple Rum Glaze

Ingredients:

1 boneless pork loin

2 garlic cloves, pressed

salt and pepper

1 1/2 cups brown sugar, divided

1 Tablespoon spicy brown mustard

1 Tablespoon balsamic vinegar

1 Tablespoon Pineapple Rum Sauce

1/4 teaspoon cinnamon

Directions:

Wash pork loin roast, trim any excess fat, pat dry, and place in slow cooker. Press garlic and rub on pork loin. Sprinkle with salt and pepper, then prick the roast all over with a fork or skewer.

In a cup or bowl, combine 1 cup of the brown sugar, the mustard, Pineapple Rum sauce and vinegar.

 Rub all over the roast.

Cover and cook on LOW setting for 6 hours.

Combine the remaining 1/2 cup brown sugar with cinnamon; Spread the mixture over the top of the roast. Cover and continue cooking on LOW setting for 1 hour longer.

When pork loin roast is finished, remove from slow cooker and place on cutting board to rest. Cover with foil.

Meanwhile, pour juices from pork loin roat in a saucepan, removing any excess fat. On medium to low heat, bring to a slight boil. In a small bowl, mix together 1 cup milk with 2 Tablespoons of corn starch. Add to meat juices. Stir until juice mixture becomes thick and gravy consistency. Serve with garlic mashed potatoes and vegetables.

Serves 6.
