Tuesday Night Favorites:Lazy Weeknight Lasagna

Here’s a great stand-in for the start-from-scratch. You can make this dish in a matter of minutes. If you don’t have the time during the week, the ingredients can be prepped, put together and frozen on your meal prepping day and pulled out the morning of and placed in the refrigerator for thawing. This meal is ready in 30 minutes. Serve with a simple green salad and french bread, rolls or biscuits. Looking for more meal ideas for your week? Try this week’s menu ideas.

 

Lazy Weeknight Lasagna

Ingredients:

16 ounces Lasagna noodles

6 cups sauce of your choice

32 ounces non-fat or low-fat cottage cheese, drained

32 ounces Mozzarella cheese, shredded

Directions:

Preheat oven to 375 degrees. Cook noodles in boiling, salted water following package instructions. Drain. In a greased 9×12 baking dish, spread 1/2 cup sauce on the bottom. Alternate layers of noodles, cottage cheese, spaghetti sauce, and Mozzarella cheese.  Bake for 30 minutes.

Recipe Note: Any leftovers can be frozen and served on another night.

    Lasagna for me is very easy, versatile and of course yummy! Once you’ve learned the basics, you can practically do whatever you want with it. Meats in, meats out. Veggies in, veggies out. It’s like you can make each member of the family their very own lasagna version. Once you got the hang of it, it’ll take you no time to bake one.

    I agree completely! I’ve tried several different types of lasagna recipes and discovered that this is a dish that is very versatile and open to interpretation. While you do have to plan ahead for a good 45 to 60 minutes cooking time, you don’t have to worry too much about having the “right” ingredients on hand. With a combination of ingredients, you can easily whip up a yummy lasagna! I’ll definitely have to give some of your recipes a try!

    And the best thing about Lasagna, is that’s it’s a perfect leftover meal and freezes well!
