How many of you accumulated more than just one Turkey for your freezer at Thanksgiving? When Turkey’s on sale at the grocery store, it’s a great meal plan. There so many different types of meals you can make from a single Roasted Turkey; Turkey Chili, Turkey Soup, Turkey Tacos, Turkey Casserole and many more. Sunday night I decided to pull out one of those turkeys in the freezer and roast it. With the leftovers I started a simple Turkey stock to add to my freezer and made Family Style Turkey Skillet using shredded turkey meat.
This Family Style Spinach Turkey Skillet is a simple dish that can be made in a matter of minutes. Perfect dish for a school night recipe. This dish was created as one of my weeknight family meals in my March Monthly Menu Plan.
Family Style Spinach Turkey Skillet
Ingredients:
2 Tablespoons olive oil
2 cups cooked turkey meat, shredded
1/2 cup chopped onion
3 garlic cloves, pressed
1/3 cup uncooked rice
1 teaspoon Italian seasoning
1 teaspoon Citrus Basil rub
1 teaspoon fresh cracked pepper
2 cups turkey stock, reserve 1/2 cup
2 cups frozen spinach
1 15 ounce can diced tomatoes with juice
Directions:
In a skillet over low heat oil, add chopped onion and garlic. Cook and stir until just tender. Add shredded turkey meat. Stir in rice and seasonings. Stir in 1 1/2 cups broth, bring to a boil. Reduce heat, simmering uncovered 10-12 minutes. Stir in spinach, tomatoes and remainder chicken broth. Cover and cook 3-4 minutes or until most of the liquid is absorbed.
