Busy Familes Meal Ideas
Do you feel like you struggle with what to serve your family at mealtime? I can honestly tell you I wasn’t quite sure what to make for dinner the other night. The hubby had taken the kids with him to the city and I had the house to myself for a few hours. It was a strange day at the office and my head was pounding. The last thing I wanted to do was cook. Knowing I was down to the bare minimum and just two days from doing my shopping run, I knew I had to come up with a quick and easy dinner. I knew the hubby and kids would be hungry by the time they got home and getting home late on a school night, it definitely had to be fast.
Busy Families Meal Ideas
Looking at my staples, I had onions, bell peppers, cilantro, sliced chicken meat and Ramen noodles. There is a perfect meal. My kids love Top Ramen Noodles and by adding fresh vegetables and chicken, a very comforting meal.
Oriental Ramen Chicken
Ingredients:
2 packages Oriental flavor Ramen Noodles
1 package seasoned chicken strips (located in your deli department, sandwich meat area)
1 container vegetable stir-fry (located in produce section at your supermarket)( red, green bell peppers, red onion and cilantro)
2 cups water
Directions:
In a large skillet pan, saute vegetables.
Add water, seasoning packets and bring to a boil. Add Ramen noodles and chicken. Cook three minutes.
The great thing about this recipe is that you can experiment with different ingredients and still get a tasty meal. Substitute beef strips for the chicken and use a beef flavored Ramen noodle. Add carrots, zucchini or squash and tomatoes.
