Grilled Chicken Salad with Bacon and Apple
As a mom looking for ways to feed my family while still being able to work with my family’s budget, I look forward to the weekly grocery store specials that come out on Wednesdays. Raley’s is one of my favorite stores with great specials each week. Since we moved up to the Sierra’s, I enjoy shopping there, not just for the food but it’s the type of store that provides a “welcome” feeling to their customers. This week’s ad runs from April 1-7th. I was glancing through the ad and was amazed, Boneless, Skinless Chicken Breasts Club Pak on sale for $1.97. This is very easy on the family budget and you save up to a $1.52 pound. Fuji apples are also on sale for $0.97 a pound, saving up to $1.02 a pound.

Ingredients:
1 ½ pounds Boneless Skinless Chicken Breasts (about 2 or 3 breasts)
½ cup Newman’s Own Light Cranberry Walnut Seed Dressing
4 Slices of Hormel Bacon Cooked and Crumbled
2 Cored and Cubed Fuji Apples
1 (6 ounce) bag Fresh Express 5-Lettuce Mix
½ Cup Sliced Green Onions
Place 1 ½ pounds Raley’s Everyday boneless, skinless, chicken breasts in a gallon-size resealable plastic bag. Add ½ cup Newman’s Own Light Cranberry Walnut Salad Dressing and let marinate for 15 minutes or up to 1 hour. Remove chicken from marinade and grill over medium heat for 5 to 7 minutes on each side or until cooked through. Cut chicken into chunks and toss with cooked and crumbled slices of Hormel Sliced Bacon, 2 cored and cubed Fuji apples, 1 (6 ounce) bag Fresh Express 5-Lettuce Mix and ½ cups sliced green onions. Toss with additional dressing to taste.
Makes 4 to 6 servings
